My favorite is Now and Later Baked Ziti.
2 lb. ground beef
1 large onion, chopped
1 jar prego
1 box tube shaped pasta (ziti), cooked and drained
3 cups shredded mozzarella cheese
1/2 cup grated Parmesean cheese
Cook beef and onion is saucepot until browned. Pour off fat. Stir in pasta sauce, ziti, and 2 cups mozzarella cheese. Spoon into 2-12 and 1/2" by 8 and 1/2" disposable pans. Top with remaining mozzerella and parmesean cheeses. Bake at 350 for 30 minutes.
****To freeze, prepare ziti but do not bake. Cover with foil and freeze. Bake frozen ziti uncovered at 350 degrees for 1 hour or until hot. Or refrigerate 24 hr to thaw. Bake thawed ziti uncoveredat 350 degrees for 45 minutes or until hot.

Gingerbread can be made before hand and stored in the fridge. Then the next day cut out men with your daughter and raisins for eyes etc.
Jam tarts are another good baking with a two year old, just roll out the pastry and using a cutter make circles and then add a dollop of strawberry jam.
I always use this site for recipes and find that they are always well explained and reliable well virtually idiot proof.

Betty Crocker has a one meal dish that you can make, store in the fridge until you get home from work,and also a variety of sweet's that you can put in the fridge until your ready to bake, such as; cookies, pastry's, etc.

I make baked spagetti the night before..
1 lb of ground sirloin
1 can of diced tomatos, with green pepper and onion
1 can of whatever type of spagetti dressing you like
1 lb of noodles (i break my noodles into bite sizes b/c i have small children as well)
make as normal
Place in casserole dish
refrigerate until ready to complete
Next day...
Remove and add 2 large helpings of sour cream mix into spagetti
cook at 350 degrees until warm and bubbling
remove cover entire dish with shredded cheese place back in the oven until cheese is melted.
