use one 1b black eye pea to soak the night before
put the soak peas in pot in half pot water let boil with some chop chive onions garlic tomatoes and ginger all cut up and boil with peas. when peas is soft make a sauce with ketup mustard and soy sauce put in pot to make a very tasty gravey and to make this even better add some ox tail to the peas boy that is how to cook black eye peas

Well here in the Caribbean the way of doin it where I'm from is by using the following ingredients:
-Canned black-eyed peas (if using uncooked peas-it is best to cook in a pressure cooker)
- COOKED Pigtail or salt beef that was put in ''soak'' (container of water) the night BEFORE or at least that morning to get rid of some of the salt content (Usually cooked in pressure cooker which is very quick...done when the meat is tender and no longer tough, especially the salt beef)
-Onion, sweet pepper
-Seasonings, thyme
-Browning sauce
1. Fry the onion and pepper in a little oil until brown, then add salt beef and pigtail. Stir and let fry for a minute or two. Add peas, seasonings and browing sauce {when tasted, if it needs a little salt, some of the salt water from the meat is added since the water it was boiled in WILL be salty-it is a great way of adding more flavor to your pot}..Add thyme after it has cooked for a while...
2. Let boil for about 20-25 minutes and remove thyme when ready to serve...
Done!
It is sometimes cooked as a soup or accompanied with white rice and fried, ripe plaintains ;)

Casserole with Black-Eyed Peas:
45 min 10 min prep
8 servings
1 lb lean ground beef
2 (32 ounce) cans black-eyed peas with jalapenos, drained
2 cups rice, cooked
1 (16 ounce) can diced tomatoes
1 cup cheddar cheese, shredded
1/4 cup onions, minced
1 teaspoon salt
1/4 teaspoon pepper
1 clove garlic, crushed
1. Brown meat.
2. Combine all ingredients in 13X9X2 casserole.
3. Bake at 350 degrees for 25 minutes.
4. Serve.

Soak peas for 24 hours, In a large pot add one pork hamhock(preferable smoked) fill pot with water about half way boil until tender(atleast an hour) add soaked peas & reduce heat and simmer for 20-30 minutes, add salt & pepper to taste.

Smoked bacon, cook in water, add pepper corns, one block chicken bouillon and peas. Simmer slowly. Check your salt. You can remove some early, serve as a salad with feta cheese and sweet red peppers. Or cook them soft and serve them as the starch to your meal. I like to eat them with pork chops, kale, and sweet potatoes(candied).

Soak them for 24 hours (dry beans only)
Drain, put in a pot and cover with water
Cook over very low heat
Fry 2 pieces of salt pork, add the grease to the pot
After the pork cools, crumble it and add it to the pot
After 2 hours add a chipotle pepper and 2 teaspoons of adobe sauce
After 3 hours, add 2 teaspoons of dried savory
Taste for doneness.

Here's a quick recipe,
First open the can, then pour in pan and heat up till they are hot and then eat them. ALso can be mixed with veggies for a salad or with other foods. Hell just be creative.
