We are trying to find a recipe to make stuffed lobster tail bu tmy fiance is having difficulty when the recipe says to split the tail. Which way? from top to bottom or vice versa and which side, the back or the underside?

Serve crab cakes as an appetizer and lobster tail as a main course. Why dilute the taste of Good lobster tail with anything but butter.

Use a chicken scissor. Cut from top to bottom. Crab imperial stuffed in a lobster tail is lovely, because the crab is creamy.
But you could a make a mix of maryland famous crab cakes and then fill that in the lobster. I also add a little tabasco and red chili pepper(chopped finely). It gives it a wonderful zing!!! Enjoy!

When you have the tail exposed all you do is cut thru the LENGTH of the tail but do not go all the way thru the meat; you want to simply make a sort of pocket to put the crab mixture into, it should form a sort of crown on top, like spilling out of the top of the cut.

think of a baked potato as presented at a restaurant, it is split but only partway thru with the butter/sour cream on top.

After you cut the tail you can even use a melon scoop to take a small amount of the meat out of the middle so you can get more stuffing in it. {be careful since the meat is tender & can rip easily}

I prefer to cook each seperately since they are so delicate in flavor, when you cook them seperately they retain their own flavor instead of mingling.
