It's possible, but it would be very difficult. Freeze-drying is a process which takes hours and requires very specialised equipment. You need to super-chill the ice-cream, and then heat it up in a partial-vaccuum, and then re-chill it, and then seal it in an air-tight container. Not for the faint of heart.

If you want to get a freeze-drying machine, you'll need to go to a lab-equipment store. Expect to pay upwards of $2,000. Unless you're going to eat LOTS of ice-cream, it's probably cheaper to just buy it.

Still, it is delicious stuff, isn't it??? =)

The problem is the that ice cream fat cells are so delicate that the process will injure the cell walls and you will never get back the wonderful smooth texture of great ice cream. Have you ever tried eating ice cream in your freezer that got freezer burn? That is your freeze dried ice cream.
