I am making Fried Catfish tonight, I would like to have Hush puppies with it but dont have a good recipe for Hush Puppies.

Yum! Hush Puppies go terrific with fried fish of any sort! Here's a recipe from chitterlings.com which I have found to be delicious! Enjoy your dinner!

Ingredients:
2 cups yellow corn meal
1 cup plain flour (flour is what gave it the
lighter taste and you can experiment with the
amount you use if you want)
2 eggs
1 cup buttermilk (you can also use plain milk in
a pinch, but nothing compares to buttermilk)
3/4 teaspoon seasoned salt. I use Lowreys but just
about any brand will work as you are just looking
for something to spice things up a little
1/2 teaspoon ground pepper blend (again, the idea
is to spice things up a little).
1 teaspoon baking powder
2/3 teaspoon baking soda
1/8 cup bacon grease. This is another big key to
the flavor. In a pinch you can use other types
of cooking oil, but bacon is my favorite.

You also need some type of cooking oil to deep fry
these in. I usually use Crisco oil although peanut oil
and some of the lower fat oils work well too.

Mix all of the dry ingredients in a bowl. Add your
eggs, oil, and buttermilk. Stir it all up until
the flavors are thoroughly blended.

Turn your cooker on medium-high heat. When it's
hot you can drop your hush puppies in using a
table spoon. Allow them to brown on all sides.
They should begin floating when done, but if they
don't, don't overcook them.

Serve as a side dish with just about any meal. I
loved eating them with fried catfish or fresh
chopped or pulled pork barbecue. Most of the local
resturants added them as a standard feature when you
bought plate meals.

Some restaurants have also added yellow corn to their hush puppies and a touch of sugar. If you want to give this a try,
precook the corn, but don't overcook it. Use 3/4 cups
in the recipe above. On top of that add 2 table-spoons
of white sugar.

INGREDIENTS 2 quarts vegetable oil for frying 3 cups cornmeal 2 teaspoons baking powder 1 1/2 teaspoons salt 1 1/2 cups milk 1/2 cup water 1 egg, beaten 1 small onion, minced DIRECTIONS Heat vegetable oil to 365 degrees F (185 degrees C). In a large mixing bowl, combine corn meal, baking powder, salt, milk, and water. Mix in egg and chopped onion. Shape the batter into small balls, approximately 1 tablespoon each. Use a long handled spoon to gently slide the hush puppies into the hot oil. Cook 8 or 10 at a time, until golden brown. Remove from the oil with a slotted spoon, and roll on paper towels to briefly drain. Serve hot.

Long John Silvers Hush Puppies:

1/4 cup milk
1 egg
1/2 cup cornmeal
1/4 cup flour
1 teaspoon baking powder
1 teaspoon garlic salt
1 teaspoon onion powder

1. Combine dry ingredients.
2. Add egg and milk.
3. Stir well.
4. Should be the consistency of bread batter.
5. If too thin add more corn meal or flour.
6. Drop by teaspoonful into hot grease.
7. Cook until brown.

PLANTATION HUSH PUPPIES

1 1/2 cup cornmeal either color
1/2 cup all purpose flour
1 tablespoon baking powder
1/4 tablespoon baking soda
1 1/2 tablespoon dehydrated onion flakes
1/4 cup cultured buttermilk
1 tablespoon salt
1 teas cayenne pepper
1 pinch of finely chopped dill
water

Mix as many portions as desired and store in a cool dry place, will store for six months.
Use to coat fish, clams, oysters, Place adequate amount into a Ziploc bag and shake fish filets in bag until coated.

Dredge fish, clams, oysters, in an egg wash, then roll in hush puppy mix for a thicker coating.

Add water to mixture until a bit thinner than desired, let stand for 20 minutes to allow onion flakes to reconstitute. Mixture wills thicken.

Spoon into a 375 degree hot oil pot, until they float and are a golden brown. For a more crunchy effect cook until dark brown.

Hush Puppy Racipe

1-1/2 cups cornmeal
1 egg
2 teaspoons baking powder
1 pinch baking soda
1/2 cup flour
Milk
6 Tablespoons oil
1/2 cup chopped onions
Mix cornmeal, egg, baking powder, baking soda, and flour, then add milk to thickness desired. Add oil and onions. Shape into balls and fry in oil.

this recipe is simple & delicious...the secret is the sugar! it will play up the savory/sweet factor, which will compliment your catfish!

1 cup cornmeal
1 teaspoon baking powder
3/4 teaspoon sugar
1/2 teaspoon salt
1 egg
1/2 cup milk
2 tablespoons shortening, melted
2 cups oil

Mix cornmeal, baking powder, sugar and salt in large bowl.

Beat egg in small bowl; stir in milk and shortening. Add to cornmeal mixture; stir just until moistened.

Heat oil in large heavy saucepan. Drop cornmeal mixture by tablespoonfuls into hot oil; cook until golden, turning to brown evenly.

Hush puppies are so hard to prepare and to make the same over and over again. GO BUY SOME FROZEN HUSH PUPPIES AT YOUR LOCAL GROCERY STORE.

1 c. chopped onions

1/4 c. milk
Honey

Mix cornmeal, flour, onions with eggs and milk. Form into balls, deep fry until golden brown. Drain on paper towels. Serve immediately with a side dish of honey and butter.

follow a recipe for cornbread, add diced onion, peppers, corn niblets, etc. make the batter a little thicker than usual and do not overmix. fry in oil at a high temp until golden brown.
