These are some GREAT finger foods that are ALWAYS a hit at parties!!
Spanakopita Triangles
1/2 cup vegetable oil
2 large onions, chopped
2 (10 ounce) packages frozen chopped spinach, thawed,drained and squeezed dry
2 tablespoons chopped fresh dill
2 tablespoons all-purpose flour
2 (4 ounce) packages feta cheese, crumbled
4 eggs, lightly beaten
salt and pepper
1 (24 ounce) package phyllo dough
3/4 lb butter, melted
Preheat oven to 350 degrees F (175 degrees C).
Heat vegetable oil in a large saucepan over medium heat.
Slowly cook and stir onions until softened.
Mix in spinach, dill and flour.
Cook approximately 10 minutes, or until most of the moisture has been absorbed.
Remove from heat.
Mix in feta cheese, eggs, salt and pepper.
Lay phyllo dough flat and brush with butter.
Place a small amount of spinach mixture onto each piece of dough.
Fold phyllo into triangles around the mixture.
Brush with butter.
Place filled phyllo dough triangles on a large baking sheet.
Bake in the preheated oven 45 minutes to 1 hour, or until golden brown. (makes 27)
Stuffed Mushrooms
20 large mushrooms
4 tablespoons butter or margarine
2 cloves garlic, chopped
2 tablespoons fresh parsley, finely chopped
1/4 cup parmesan cheese or romano cheese, grated
1/2 cup italian seasoned dry bread crumbs
Wipe clean mushrooms with either a mushroom brush or a very slightly damp paper towel.
Carefully remove stems from mushrooms and chop stems.
Place butter and garlic into a heated skillet and let butter melt, stirring.
Add chopped mushroom stems and saute until lightly brown.
Add parsley,stir,and remove from heat.
Add cheese and stir to combine.
Add bread crumbs, stirring until mixture is crumbly.
Lightly fill each mushroom cap with the sauteed mixture, but don't pack tightly.
Set on a rimmed cookie sheet lined with foil and bake in a preheated oven at 350 F for about 20 minutes. (makes 20)
Garlic Chicken Bites
2 boneless skinless chicken breasts, cut into bite size pieces
1/2 cup olive oil
4 cloves garlic, minced
1/4 teaspoon pepper
1/2 cup breadcrumbs
1/4 teaspoon cayenne pepper
Place chicken in shallow dish.
In small bowl, mix olive oil, garlic, and black pepper.
Pour over chicken.
Cover and marinate 30 minutes.
Drain.
Preheat oven to 475°F.
Mix bread crumbs and cayenne.
Coat chicken.
Arrange in a single layer on cookie sheet.
Bake 10 minutes or until brown.
(makes 16)
Garlic Pita Bites
INGREDIENTS
1 (10 ounce) package pita bread, cut in half
3 tablespoons butter
1 teaspoon crushed garlic
1 teaspoon dried Italian-style seasoning
2 tablespoons grated Parmesan cheese
DIRECTIONS
Preheat oven to 350 degrees F (175 degrees C).
Open pita bread halves and roughly cut into approximately 2 inch pieces. Arrange on a medium baking sheet.
In a small saucepan over medium heat, melt butter and mix in garlic and dried Italian-style seasoning. Pour the mixture over pita bread pieces.
Sprinkle bread with Parmesan cheese, adjusting the amount as desired. Bake in the preheated oven 10 minutes, or until lightly browned.

Ham rolls- a package of sliced sanwich ham and some garlic cream cheese. Spread the garlic cream cheese all over one side of a slice of ham. Roll and cut in thirds. Stick toothpicks through each roll. These are sooo yummy and soooo easy.

Here's one that I learned in Spain that everybody loves, even people who claim to hate mushrooms:
Mince one clove garlic and add to about a cup of mayonnaise.
Mince another clove of garlic and add to some olive oil in a pan. Add a bunch of sliced mushrooms and a bit of salt. Cook until mushrooms are soft and have given up their liquid.
Turn on your broiler.
Slice a baguette crosswise into 1"-thick pieces (as if you were making bruschetta). Place on a baking sheet and broil for a minute on each side just to dry the bread out a little.
Spread about a teaspoon of garlic mayonnaise on each slice of bread. Top with about a teaspoon of mushrooms. Broil until the mayonnaise bubbles, less than a minute.
Serve.

Do you have Trader Joe's near you? They have mini mushroom tarts that are quite good. Also, they have mini egg rolls, you can do spanikopita(I think I spelled that wrong) which is phyllo dough with spinach and feta cheese. It looks incredible, tastes good and you can buy it premade and just pop it in the oven. Also, I just did a shower and did mini quiches. I got the box at Sam's Club and it had 60 quiches for $9. Seemed like a good deal to me.

Deviled eggs are always a hit.
Simply boil the eggs, Peel, cut in half, put the yolks in a food processor add miracle whip (you can use Mayo too), add a dash or two of mustard, some salt and pepper and mix until smooth, taste and make sure it is to your liking, you can add more mustard if you like a tang and I add a dash of garlic salt.
Put yolk mix in a sandwich bag, squeeze air out, cut one tip off and pipe filling into eggs white halfs. Top off with a dash of paprika. Yum.

triangular finger sandwiches (w/o crust) of tuna, egg salad, cream cheese with sandwich meats. deviled eggs, party wings (fried, barbequed, buffalo (spicy) or teriyaki (sticky). or you can just make plain, broiled party wings (no sauce, just seasoned).
remember the fruit tray...strawberries, grapes, seedless (snip them from the vine in clusters), melon slices, and orange slices. your relish tray can consist of mini, peeled carrots, celery sticks, pickle chips, and olives. remember the bowl of ranch dressing for dipping.

Hummus and pita are great - you can buy it in the grocery store, and there are lots of flavors.
Try wraps, tortillas layered with all your favorite things and slice them into bite sizes.

pigs in a blanket (small hot dog in a small roll), shrimp (you can get them at the supermarket), veggie platter, ooh! Ore Ida has these seasoned french fries that are really good and they're not too greasy, and fruits like strawberries and grapes.
