SPANISH RICE

INGREDIENTS
1 tablespoon vegetable oil
2 cups uncooked long-grain white rice
1/4 onion, chopped
1 green bell pepper, chopped
salt and pepper to taste
1 (14.5 ounce) can stewed tomatoes
4 cups water
DIRECTIONS
In a large skillet, combine oil, rice, onion, green pepper and salt and pepper until the rice is a light brown color. Remove skillet from stove.
Mix tomatoes into the mixture. Pour in water (it should cover the entire mixture; use more if necessary). Return the skillet to the stovetop and bring the mixture to a full boil; salt and pepper to taste. When the mixture begins to boil, cover the skillet, and reduce heat to a simmer. Cook 12 to 15 minutes and never, I mean NEVER, remove the cover. After 12 to 15 minutes, turn stove off and let stand for another 12 to 15 minutes. DO NOT remove cover until the final 15 minutes has elapsed!

Sweet Rice Fritters
ingredients
100 g (4 oz) long grain rice
2 eggs, beaten
50 g (2 oz) caster sugar
few drops vanilla essence
75 g (3 oz) plain flour
15 g (1 tbsp) baking powder
salt
pinch ground cinnamon
50 g (2 oz) desiccated coconut
oil for deep frying
icing sugar for dredging

method
1. Cook the rice and cool. Turn it into a bowl, add the beaten eggs, sugar and flavouring. Mix well.

2. Sift in the flour, baking powder, salt and cinnamon with the coconut. Mix thoroughly.

3. Drop tsps of the mixture into hot oil and cook until golden brown. Cook three or four fritters at a time,draining them on absorbent kitchen paper.

4. Dredge with icing sugar and serve hot.

In a 9 x 13 pan pour 3/4 cup uncooked long-grain rice. Top with 1 can of cream of mushroom soup that has been mixed with 1 1/3 cups water. On top of the rice and soup mixture, put several boneless skinless chicken breasts. Cover and bake at 350* for 45 minutes. My whole family loves this and it is quick, easy and cheap!

Southwest (Mexican/Spanish) Rice:
To cooked rice I add tomatoes either chopped fresh or canned with their juice, drained cooked beans (any kind such as black, red, pinto which would be drained or even pork and beans which wouldn't be drained), drained cooked corn, and some sort of seasoning. I like spicey so I would also cook and add some onions and peppers if I had them. As well as taco seasoning (separate that's cumin, chili powder, onion, garlic, and so on). You can also add more tomato sauce or paste. Meat is optional, depending on your taste, but if you add meat, cook it with the onions and peppers. You can also stir in some cheese. I like cheddar or moza but again this is according to taste. After all of the precooked ingredients have been added to the rice and everything is warm, I add drained black olives. Some like sour cream, optional.

In a fry pan put a little butter, sliced cabbage, green pepper, onions and some thin beef strips. Cook and add instant rice already cooked. Add some soy sauce and stir `til blended well. Mmmm..

there's this great mushroom rice recipe that i know
take some mushrooms and fry it on a pan
once they're cooked add some flour and milk to it and mix it around.
put the mushroom sauce on top of the rice and it tastes so good!
