Hi tazo,
I take it you you are preparing for ease of use later or as we say
"mise en place" bring to the boil well salted water enough to just
cover the tails add one whole lemon cut in half place in shelled
tails for 10 min at boiling, drain, remove and while still hot wrap
in cling film and place in fridge, as they cool they create there
own stock in the cling so therefore self marinade. As and when
required unwrap, peal and dress in your own style.....
A nice blitzed lime, cucumber and Dijon mustard mayo will
enhance the full flavour served on a bed of mixed leaf salad
and warm garlic bread........... bon appetite

Be careful not to overcook them! I think steaming is the best way to ensure sweet moist lobster meat. They really should only be steamed for another minute or two after the shells turn bright red.

Buy live lobsters, fresh means tender!!
Since you didn't, just boil the tails up and make sure you don't over boil them.
