Pub Burgers
My Pub-style burgers are basically a cheeseburger with caramelized onions and a mayonnaise/horseradish sauce concoction on inside-out Parmesan toast.
Use a nice substantial bread to make the Parmesan toast.
The quantities here make 2 burgers.
Ingredients
4 slices whole wheat or whole grain bread [Brownberry Natural Wheat recommended]
1 cup coarsely grated Parmesan cheese [grate on the side of a 4 sided box grater with the largest holes]
3 tablespoons unsalted butter
1 large yellow onion, sliced
3 tablespoons sugar
1 cup Hellmann's or Best Foods mayonnaise
1/4 cup horseradish cocktail sauce
coarse salt or house seasoning
freshly ground black pepper
1 1/2 lbs 81% lean ground beef, divided in half and formed into patties
4 ounces favorite cheese, divided in half [bleu, cheddar, Swiss, etc.]
Method
Heat oven to 350°
Toast the bread and then scatter the cheese evenly across the tops. Place on a baking sheet and bake until the cheese has melted but doesn't brown. Remove from oven and set aside.
Heat broiler
Heat a large skillet to medium high. Add the butter. When the foam from the butter has subsided add the the sliced onion. Add the sugar and caramelize the onions, 10 to 15 minutes. Remove from heat and set aside.
In a small bowl, combine the mayonnaise and cocktail sauce. Cover and refrigertate.
Season the patties with salt and pepper and broil to preffered doneness turning once and adding 2 ounces of cheese, if using, on each burger during the last minutes of cooking.
To assemble: put one slice of toast cheese-side down on a plate. Put a little sauce on the toast and top with a pattie. Top with caramelized onions and more sauce as desired. Top with a second slice of toast, cheese-side up. Fashion the 2nd burger the same way. Serve with onion rings.

I live in South Central Los Angeles, there's a spot called The Three Bears. My favorite burger there has pastrami, 2 hot links and three hamburger patties plus lettuce, onion, pickles, tomatoes. Cost $13.00 per burger.
