what are the phisical proporties of salt and why do most cooks and chefs use it

i know it gives flavor... scratch what i said about flavor and why chefs use salt but what are some good properties of salt

salt is a mineral
physical properties, giant ionic lattice....not sure if thats what you mean
but all in all salt is not needed to be added to any of our food, as over our daily allowance is already in food and we do not need to add any more, although most people do jsut for flavour

Salt activates the taste buds and brings out the taste in foods.

Some foods are nutritious but tasteless and salt makes you think there is flavor in the meal.

A good example is pasta. Cooked in straight saltless water, pasta has a slight flavor. Cooked in salted water pasta has a great flavor.

Salt is technically Sodium Chloride NaCl. Salt enhances the flavor of any sort of food (you even put salt into sweet dishes to zest the flavor) and it is also a preservative. In olden days salt was a high priced commodity, as was pepper and spices.

Salt is life.

Salt was so important in Ancient Rome that its armies were paid in salt, hence our word "salary" from the Latin for salt (salarium). A soldier was "worth his salt" if he performed well in battle or died bravely in battle.

Salt enhances sweetness. Using it on less than sweet melon for instance makes a more enjoyable taste. Controlling the salt in cooking by using unsalted butter helps avoid over acidity and over sweetness by allowing the cook to add to taste.

Aside from the technical justification, for me, food is there to have a place to put the salt....(smiling)

Salt enhances the flavor of food. Technically, it doesn't add its own flavor to the food, but it makes your tongue more receptive to the flavors already in your food.

it adds potassium to the food if you use sea salt it is lower in sodium and the flavor is still there
