I like sliced fresh tomatoes with homemade macaroni, or sometimes brocholli.

I would have tomatoe sauce and meatballs with a salad and garlic bread.My drink would be homemade grape wine

this is what i do...all great recipes and go really good with macaroni. a wide variety of foods and flavors!

Roasted Asparagus
1 lb asparagus
1 1/2 tablespoons olive oil
1/2 teaspoon kosher salt (or 1/4 teaspoon regular table salt)

preheat oven to 425 degrees F.
cut off the woody bottom part of the asparagus spears and discard.
with a vegetable peeler, peel off the skin on the bottom 2-3" of the spears (this keeps the asparagus from being all "stringy" and if you eat asparagus you know what I mean by that).
place asparagus on foil lined baking sheet and drizzle with olive oil.
sprinkle with salt.
with your hands roll the asparagus around until they are evenly coated with oil and salt.
roast for 10-15 minutes, depending on the thickness of your stalks and how tender you like them.
they should be tender when pierced with the tip of a knife.
the tips of the spears will get very brown but watch them to prevent burning.
they are great plain but sometimes I serve them with a light vinaigrette if we need something acidic to balance out our meal.

Easy Garlic Bread
8 hotdog buns (1 package)
butter or margarine (to taste)
garlic powder (to taste)
1 (8 ounce) bag shredded mozzarella cheese (optional)
mushrooms (optional)
black olives (optional)
pepperoni (optional)

Split hot dog buns open and lay on cookie sheet (crust side to the cookie sheet).
Spread butter on open side of each hot dog bun.
Sprinkle with garlic.
Place in 350 degree oven and bake until top side of bun is very lightly browned or until butter (and cheese-if added) is melted. Check often.
Good served with spaghetti or lasagna and salad.
May add mushrooms, black olives, pepperoni, mozzerella cheese, etc-- before placing in oven-- if desired. ~


Caesar salad

6 tablespoons olive oil
2 tablespoons red wine vinegar
1 tablespoon lemon juice
1 egg yolk
1 teaspoon Worcestershire sauce
1 clove garlic, minced
1/4 teaspoon salt
1/8 teaspoon pepper
1/4 cup parmesan cheese, grated
1 head romaine lettuce
1/2 cup croutons
1/8 cup parmesan cheese

Combine olive oil, red wine vinegar, lemon juice, egg yolk, Worcestershire sauce, garlic, salt, pepper and 1/4 cup Parmesan cheese.
Mix together well.
Set aside.
Tear lettuce into bite size pieces in salad bowl.
Add croutons and 1/8 cup parmesan cheese.
Pour dressing over the lettuce.
Toss and serve.

A salad or maybe individual vegetables.

Be wary of bread and rices though. Your meal may become overly starch-y.

you can have it with " Carbonara Sauce "
or the " pomodore sauce "
or some " lemon grilled chicken breast " with some oven baked vegetable.
