Poppy Seed Squares:

1¼ hours 30 min prep
42 squares

Cake
3 eggs, separated
3/4 cup sugar
1/2 cup oil
1/2 cup milk
1 teaspoon vanilla
1 cup flour
1 teaspoon baking powder
1/2 cup poppy seeds, plus
3 tablespoons poppy seeds
OPTIONAL
1/4 cup chopped walnuts (optional)
1/4 cup chopped glaces cherries (optional)
walnuts or cherries can be gently folded into the batter after adding the beaten egg whites
Filling
6 tablespoons butter
3 tablespoons vanilla custard powder
3 tablespoons milk
3 cups sifted icing sugar
1 teaspoon almond extract
Glaze
4 semi-sweet chocolate baking squares
1/4 cup butter

1. Beat egg whites until stiff and set aside.
2. Beat egg yolks and sugar.
3. Add oil, milk and vanilla.
4. Mix.
5. Add dry ingredients.
6. Mix.
7. Fold in beaten egg whites.
8. Pour into greased and floured 9x13 cake pan.
9. Bake at 325F 35-40 minutes ( until tester comes out clean).

11. Filling:.
12. cream butter.
13. Combine milk with custard powder and add to butter.
14. Mix in icing sugar. ( add a bit more milk if you need to).
15. Spread over cooled base.
16. Let set in fridge for about 30 minutes then add glaze.

18. Melt chocolate and butter ( I usually do this step in the microwave) and spread over filling.
19. Refridgerate, then cut into squares.
20. This Square can be frozen.

These poppyseed squares are INCREDIBLY GOOD!!!! i love this recipe...hope you do too, good luck!

4 ts fresh lemon juice
2 ts grated lemon peel
1/2 ts vanilla extract
1 lg egg white
2 c all purpose flour
1/2 c powdered sugar
2 ts baking powder
1/4 ts salt
1/2 c chilled unsalted butter; cut
- into pieces (1
1 ; stick)
1 lg egg
1/4 c sour cream
1 lg egg yolk beaten with 1
-tablespoon w; ater, (glaze)
1 powdered sugar

Instructions

Preheat oven to 375F. Butter 8-inch square baking pan. Mix poppy seed
filling,
lemon juice, lemon peel and vanilla in medium bowl. Beat egg white in small
bowl until stiff but not dry. Fold white into filling. Set aside.

Mix flour, sugar, baking powder and salt in large bowl. Using fingertips,
rub
butter into dry ingredients until mixture resembles coarse meal. Mix egg
and
sour cream in small bowl. Add to flour mixture; stir until moist clumps
form.
Gather dough together; divide in half. Press 1 dough piece onto bottom of
prepare pan.

Bake crust until golden, about 15 minutes. Spread filling over crust. On
floured surface, press second dough piece out to 8-inch square. Place atop
filling; press to adhere. Brush with glaze.

Bake until crust is golden, about 35 minutes. Sift powdered sugar over.
Cool
in pan on rack. Cut pastry into square.

Serves 12.
