The cheapest material for counter tops is most probably plastic laminate. It comes in various colors and patterns. Such comapnies as Formica, Nevmar, and Laminart are just a few that manufacture laminates.

Definitely a good quality professionally installed laminate. Look at some of the newer WIlsonArt and Formica patterns. I did the kitchen in my last house with a stone-textured Formica and most people thought it was real slate. Cheap, durable and, if you get tired of it, simple to relaminate with a new design. I do recomend using a plywood rather than an MDF substrate in a kitchen or bath. If you want to DIY, you can get an 8' x 2' handsome granite-look laminate counter from IKEA for under $100 (you'd pay that much or more per foot for solid surface or twice that for granite.)

I'm getting silestone this summer. It looks just like granite,comes in many colors, built in antibacterial substances, maintenance free, and the color goes all the way through. Home Depot not Lowes. Depending on what color you choose determines the price, as well finished edges, and sink mount. The last house we owned my husband installed laminate from Lowes. It looked like granite, as much as laminate can . If you do it yourself, you could probably do it under $300.

Formica are good . It gives the look of granit with a lot lower cost. but it does matter if you are working with a budget.

Tile. It's durable, easy to clean, variety of colors, textures, patterns, and very affordable.

I would use granite tiles. They are easy to lay, and last forever.
