I'm fixing to put on a pork loin, however I am going to sear it first. Should I cook it slowly covered or uncovered? No brown sugar, mustard or anything else, just plain old salt, pepper and garlic (my preference)

Place the roast in a shallow roasting pan in a 400 degree F oven and roast it until it turns brown on top (about 20 minutes)
Remove the roast from the oven and using tongs or a meat fork, turn the roast so that the bottom side faces up
Return the roast to the oven, reduce heat to 325 degrees F, cover and continue cooking until a meat thermometer inserted into the middle of the roast registers 150 degrees F (about 1 – 1 1/2 hours)
When the roast is cooked, remove it to a carving board and let stand, loosely covered with foil (about 15-20 minutes) before slicing

The best way I have found to do a pork loin is to use one of those rotisserie cookers (the 'set it and forget' one they sell on TV works great)

no cover and don't cook it too slow...350 for about an hour if it is a tenderloin.....maybe less time....don't need to sear it first

i say covered... u like it plain old salt, pepper n garlic.. just like me.. yummie.. u should TRY PORK STEAK.. with just salt, pepper n garlic.. lots of garlic.. promise u'll like it..

It will be more tender if you cover it. The slower it cooks, the more it will fall apart.

cover it, it won't dry out as much, it'll retain some of the moisture
