Pancakes
1 egg
1 cup milk
2+ cups flour
2 Tbsp. sugar
1 tsp. vanilla
2-3 tsp. baking powder
2-3 Tbsp. cooking oil
Beat the egg and milk together. Add sugar, vanilla and oil. Then stir in dry ingredients quickly.
Tips:
Whole wheat flour will make a heavy pancake, so lighten it up by adding extra baking powder and an extra tablespoon of sugar. Adjust the flour/milk ratio to make a thinner batter when using whole grains.
If you have any oats, you can grind them in a blender/food processor to make flour. Use part oat flour and part whole wheat flour.

if you dont have butter but have cream i suggest you make butter! This is how to make butter:
First get some thickened cream, beat it for 5 minutes or more on high, beat until cream starts to become very thick and lumpy, with liquid sitting on the bottom. Then put the lumpy cream (which is now butter) and liquid into a strainer (the things with little holes in to bottom to soak out liquid) and get out the liquid - which is now called buttermilk. When all the buttermilk is gone you have butter! Yopu can add salt to make it salted butter to! I know this from my food tech teacher. whe had to make butter in my cooking class. The butter is actually quite good to. Hope i helped!!! I'll also give you some recipes without butter:
Apple and Oatmeal Pancakes
1 1/4 cups buttermilk
2/3 cup quick-cooking oats
1 large egg, beaten lightly
2 tablespoons firmly packed brown sugar
2/3 cup grated, peeled apple
3/4 cup all-purpose flour
1 teaspoon baking soda
1/2 teaspoon salt
1 teaspoon ground cinnamon
2 tablespoons vegetable oil
Maple syrup as an accompaniment
In a bowl whisk together 1 cup of the buttermilk and oats. Set aside for about 15 minutes.
In a large bowl whisk together the egg, brown sugar and apple. Stir in the flour, baking soda, salt, cinnamon, oil, the oat mixture and the remaining 1/4 cup buttermilk and mixing well.
Preheat a greased griddle over moderate heat. When hot, ladle scant 1/4 cup batter for each pancake. Pancakes are ready to turn when bubbles appear on top and the sides appear "dry". Continue cooking until the bottoms are golden.
Serve pancakes with maple syrup.
Blueberry Buttermilk Pancakes
1 cup all-purpose flour
1 teaspoon baking soda
1/2 teaspoon salt
1 large egg, slightly beaten
1 cup buttermilk
2 tablespoons butter, melted (or use vegetable oil, if desired)
1 cup fresh or frozen blueberries - rinsed, dried and tossed in flour
Stir together flour, baking soda and salt in mixing bowl.
Beat eggs in separate bowl; stir in buttermilk and melted butter
Add liquid mixture to dry ingredients, stirring just until blended. Fold in blueberries.
Heat greased griddle or skillet over medium heat or to 375*F (190*C). Griddle is ready when a few drops of water bubble and skitter rapidly around.
For each pancake, pour scant 1/4 cup batter onto hot griddle. Cook pancakes until puffed, bubbly and dry around edges. Turn and cook other sides until golden brown.
Huckleberry Puffed Pancake
4 large eggs
1 cup milk
1 teaspoon vanilla extract
1 cup all-purpose flour
1/3 cup butter or margarine
2 cups fresh huckleberries
Powdered sugar
Preheat oven to 450*F (230*C).
Whisk together eggs, milk, and vanilla. Add flour and beat until very smooth.
Place butter in a quiche pan and melt in oven. When butter has melted, pour in batter. Bake 20 minutes until puffed and golden.
Dust with powdered sugar and serve with fresh huckleberries.
Hope this helped!!
