LOL. I hate eating wild game, can't stand the taste.

SERVINGS About scaling and conversions

INGREDIENTS
6 pounds venison (deer meat)
1 1/2 cups water
1 cup chicken broth
1/2 cup olive oil
3 tablespoons butter
3 cloves garlic, minced
1 teaspoon Louisiana-style hot sauce
1 tablespoon distilled white vinegar
1/4 cup chopped fresh parsley
3 leaves fresh basil, chopped
2 tablespoons fresh rosemary
1 teaspoon ground cumin
1/2 teaspoon paprika
salt and pepper to taste
DIRECTIONS
Slice venison roast into thick 1 inch steaks.
In a saucepan, combine water, chicken broth, olive oil, butter, garlic, and hot sauce; bring to a boil. Reduce heat, and stir in vinegar. Season with parsley, basil, rosemary, cumin, paprika, salt, and pepper. Simmer for 20 minutes, stirring regularly. Allow to cool.
Pour cooled sauce over venison steaks, and marinate in the refrigerator for 3 to 4 hours, turning regularly.
Preheat an outdoor grill for high heat and lightly oil grate. Take steaks out of marinade, reserve marinade.
Grill steaks for 7 to 8 minutes per side, or to desired doneness. Turn them regularly and make sure you don't over-cook. Mop steaks with reserved marinade while cooking.

My mother would always fry bacon and then fry the deer steak in the grease. With roasts she always put
strips of bacon over the roast and it always helped with the gamey taste.

Marinate it overnight in milk or buttermilk is the only way to remove the gamey taste.

Make sure you remove the thin layer of fat on the meat.That will help to remove the gaminess. Also rolling it in flour,salt,pepper, and garlic cooking it slow in butter with onion. shouldn't taste gamey after that..

Marinate it in a small bottle of Zesty Italian Salad Dressing for about 24 hours. My cousins do this and it is the best steak EVER!easy too!

If your venison has bone in it -- get rid of it, that is where the gamy taste comes from---soak in refrigerator over night in milk--pat dry, season and fry in a skillet, add some chopped onion, then a can of mushroom soup---make some instant mashed potatoes and a can of green beans and enjoy!!

Husband (Avid deer hunter) said to marinate it over night with buttermilk and then in cooking process season with Lawery's seasoning salt.
