I like to make "deviled eggs" but when the yolk is too close to the edge the white part tears and won't hold the yolk mixture. Is there any way to insure that the yolk cooks in the middle?

THE NIGHT BEFORE BOILING OPEN CARTON AND TIP THE EGGS SIDEWAYS. LEAVE TILL THE NEXT DAY. YOU WON'T BE ABLE TO CLOSE THE CARTON. PUT IN LARGE ENOUGH PAN THE NEXT DAY. COVER WITH WATER, BRING TO A BOIL. PUT LID ON POT AND REMOVE FROM HEAT. LET SET FOR 17 MINUTES. DRAIN AND FILL POT WITH COLD WATER.
PEEL AND ENJOY.

You don't put the yolks in the eggs, ask your chickens to lay perfect eggs. Otherwise, make what you have work ... if you have just one or two that tear, just use the yolks and make the filling a little more eggy. If there are lots with torn sides, then you have to be more careful when you fill them. I fill lots of torn sides by placing the eggs in a dish with indentations BEFORE I start to add the filling. And pipe the filling in instead of using spoons.

Only thing you can do is move the eggs around while they are cooking. The only thing that has worked for me.. and still not in the very middle but better than letting them sit in one spot.. :)

the longer you boil the egg, the more solidified the yolk becomes.

Keep rolling them around while you are boiling them.
