Oh yeah, here is one of my favorites, you might like to try. I know it is not the correct name for it, but I call them french toast sandwiches.

Make your favorite french toast,
fry up some bacon
fry 2 eggs your favorite way (I like mine over medium)
grilled 1 slice of red onion
lettuce leaves (I like romain)
Miracle Whip
Cheese (I like sharp cheddar)

Assemple like a sandwich,
then roll the entire thing in tempura batter and fry untill cheese is melted and the sandwich is golden brown.

MMM MMM yum.

Ok, now I am hungry!

oh gosh ... too many. i love sandwiches. but one of my absolute faves is:

asiago cheese bagel with hummus, sprouts, cucumber & tomatoes.

if you like something w/ a little meat:

corned beef on jewish rye with deli mustard, horseradish, melted swiss, and tomatoes - if you don't have sauerkraut.

gosh ... making me hungry!

oh, and one more ... if you like fried eggs:

two or three egg whites, fried in a pan (not scrambled) w/ tomatoes and avocado on whole grain (or your favorite grain bread - not the same on white) bread. simple but sooo tasty! you can add some pepper jack cheese to that too. yum!

okay, now i'm done.

GUACAMOLE CHICKEN SANDWICH
2 hamburger buns (or torta/sandwich bread of your choice)
1-2 avocadoes, chopped in small bits or mashed with spoon, 1 more avocado sliced lengthwise
1-2 pickles sliced lengthwise
1-2 Roma tomatoes chopped, 4 Roma tomatoes sliced lengthwise
1 chopped Jalapeno or Serrano pepper
1/2 cup chopped lettuce
2 boneless skinless chicken breasts, boiled
1 onion, half sliced into small bits, half sliced into rounds
grilled bacon (one piece)
1 lime
1 tablespoon of salt
1 cup chopped cilantro
1 cup bread crumbs
2 slices of Cheddar cheese
corn oil for frying
Make small incisions in chicken breast before boiling. Season chicken as desired. Mix the chicken pieces with the bread crumbs and fry with round onions on skillet.
To make guacamole:
In a mixing bowl, season chopped or mashed avocadoes with salt and juice of lime. Add cilantro, chopped onions, sliced Roma tomatoes, and chilies; mix well. Refrigerate until the rest of the preparation is finished.
Toast bread.

Once the chicken has finished frying, top with sliced onions, cheese, bacon, lettuce, pickles, and sliced avocadoes.

Spread guacamole on toasted bread and serve with either sliced pickles or sliced avocadoes on the side.
