I went to a party that had a beautiful cake with sugar-coated rose petals. It was a beautiful decoration and I'd like to try it myself on an upcoming cake. Does anyone know how to do this? I know it involved dipping the petals into some sugar mixture, but i don't know what.

Thanks!

You need to prepare an egg white mixture for the coating and then dust with granulated sugar. It really depends on the number of petals how much mixture to create. For an added effect, they make a dusting powder (hard to find) that matches the colors of your petals

I did this once, it didn't turn out perfect, but I followed the receipe here: http://www.pastrywiz.com/wedding/flowers.htm

I saw this on food tv awhile back:
Sugared Rose Petals:
24 pesticide free rose petals, pink, red, yellow or a combination
2 egg whites, lightly beaten*
1 cup sugar
Using a pastry brush, brush the petals with the egg whites and gently toss them in the sugar, making sure to coat both sides. Lay them on a cooling rack and allow them to dry overnight. Store in an airtight container.

I'm fairly sure you dip the petals in beaten egg white then in caster sugar.
