I cannot make the pound sign so I'll do it with $.
If the manager refunded $5, then he kept $25
$3 went to the blokes, $2 to the porter = $5
$25 + $5 is $30
OR
They DIDN'T pay $9 each. They paid a total of $27. $25 to the hotel, and $2 to the porter. Plus the $3 they kept which equals a total of $30.

They didn't each pay £9.00 for the room. They all paid £10, so in total they paid £30. But with the £5 discount, in total all they paid was £25 and not £27(= 3 x 9). From their £5 discount, the three of them took £1 (this makes the total money accounted for £28) and the porter takes the remaining £2.

There is no other pound. The question says it all: of the original £30, the hotelier kept £25 for the bill, the porter kept £2 for the tip, and the three gents kept £3 in change.

It's a trick with the wording. The wording leads you to believe that you should take £27 and add £2 to get £29, which seems to be £1 short.
In reality, it's £27 - £2, bringing you to £25, which is the original £30 paid - the £5 refund.

not to be rude but here in america we answered that question sometime ago they spent 27 received three back =30 also 25.00in cash register three to the blokes and the porter gets2.00=30.00 adding 27+2 doesnt factor into the equation its an oxymoron
