these are AMAZING low fat banana oatmeal muffins...they are low fat and much better for you than regular banana muffins and they even have chocolate in them!

1/2 cup packed brown sugar
1/4 cup margarine, softened (not tub margarine)
1/2 teaspoon vanilla
1 egg white
1 cup all-purpose flour
3 tablespoons cocoa powder
1/2 teaspoon baking soda
1/8 teaspoon salt
1/2 cup chocolate chips

Heat oven to 375°.
In large bowl, combine brown sugar and margarine until light and fluffy.
Add vanilla and egg white; blend well.
Add dry ingredients; mix well.
Mix in chips.
Drop by teaspoonfuls 2-inches apart onto ungreased cookie sheets.
Bake for 8-9 minutes. Cool 1 minute before removing from cookie sheet.

1 1/4 cups mashed ripe bananas
3/4 cup sugar
2/3 cup low-fat vanilla yogurt
4 1/2 tablespoons unsalted butter, melted and cooled
1/2 teaspoon vanilla extract
2 large eggs
2 2/3 cups all-purpose flour
3/4 teaspoon baking powder
1 teaspoon baking soda
1/4 teaspoon salt

Preheat oven to 350º F.
Lightly grease a dozen muffin tins or line with paper cups.
Place bananas, sugar, yogurt, melted butter, vanilla, and eggs together in a large mixing bowl and beat with a wooden spoon until smooth.
In a second bowl sift together flour, baking powder, baking soda, and salt.
Add dry ingredients to wet and mix until just combines.
Do not overmix, or the muffins will be tough.
Fill muffin cups three-quarters of the way full.
Bake for 25 to 35 minutes.
A toothpick inserted in the center of the muffins will come out clean when they are cooked.
Remove from the oven and cool slightly before eating.

INGREDIENTS
2 eggs, beaten
3 very ripe bananas, mashed

DIRECTIONS
Preheat oven to 350 degrees F (175 degrees C). Lightly grease or line 10 muffin cups.
In a medium bowl, combine eggs and bananas. In a separate bowl, mix together flour, salt, sugar and baking soda. Stir banana mixture into flour mixture. Fold in walnuts if desired. Pour batter into prepared muffin cups.
Bake in preheated oven for 20 to 25 minutes, or until a toothpick inserted into center of a muffin comes out clean.

Mash bananas.
Stir in beaten egg.
Add applesauce, sweetener and mix well Add flour, soda, baking powder, baking soda, and salt, mix.
Add nuts and chocolate chips.
Scoop into greased muffin tins.
(DO NOT USE PAPER CUPS BECAUSE THESE MUFFINS WILL STICK TO THEM!).
Bake 350o oven for 20 minutes
