I knew someone who forgot to add the eggs, and the cookies were okay. A bit more crumbly than usual, but okay. I think the eggs add structure and maybe moisture. This is what I found:
"In baked goods such as cookies and muffins, the eggs add moisture and act as a binder, gluing all the other ingredients together."

The best science project is one that is tried and true beyond speculation. Are science projects based on hypothesizing? You need to make the cookies yourself to see the outcome. We can give you the answer but there's nothing like the real experience.

I think the cookies would become really flat. I you had one chocolate chip in that cookie, then it would look like a sunny side up egg.

I believe that if you talke the eggs out of the batter, your dough will not form to the texture that you need, and the taste will probably not be very good, it will taste more like the flour.

My grandmother used to substitute applesauce for the eggs. I think they came out softer instead of crunchy.
