I bought a boneless pork roast(very lean) last night.I would like to make a nice meal for my wife.Does anyone have any good recipes ,and what goes well with it?

There are alot of things that you could do with a good pork roast. Some of my ideas are as follows:
1.Brown the roast on all sides then top it with a jar of apricot preserves. Pour 1/2 cup apple juice over all and bake at 350 until roast is tender.
2. Again, brown roast, lay atop of an assortment of root veggies, potatoes, carrots, fennel root, onions, season with salt and pepper cover and bake.
3.Season roast with salt pepper and brown. Bake until almost tender (maybe 1 1/2 hrs?) then make a cranberry sauce using 1 cup jelly cranberry sauce, 1/2 c orange juice, and 1/4 or so of brown sugar. Heat in pan and brush over roast. Bake 30 mins more, brushing occas. Serve remaining glaze with dinner.
4. Season, brown and bake. Saute a large onion in butter adding sliced apples until glazed. Slice roast and pour onions and apples over top.
For the sides:
mashed potatoes, salad and broccoli or asparagus.
sweet potatoes/yams and the same as above.
Even a simple scalloped or baked potato would be nice with good side salad and veggies...i.e. green beans with almonds, corn and tomatoes, peas and carrots.....on and on.....
Dessert? hot fudge sundae, banana split, cream puffs, angel food cake with strawberries and cream over all (made for YOUR angel!)

Rub the pork with some brown sugar, kosher salt, and ancho chile powder then sear either on a grill or large pan. Then make a nice chutney, I found a great combo of fresh peaches, roasted jalapeno, roasted onion, fresh garlic and cilantro. Simmer that in a pot with some apple cider vinegar, lime juice, and tequila (i really like the almond tequila you can find in some specialty stores) Next get a large glass oven pan and some foil. Line the pan with foil and put pork in center of foil then pour the chutney all over, then wrap the pork and chutney in the foil. Cook at 350 for about an hour or so then remove from oven and leave it wrapped until you are ready to serve.

As a side dish marinate some asparagus with some olive oil and soy sauce and grill until they are flexible. Then just make up some mashed potatoes add good amount of goat cheese to the potatoes along with butter, kosher salt, black pepper, and some roasted garlic if you really wanna get fancy.

When you are ready to serve slice pork nice and thin and put over potatoes using your chutney as the sauce\gravy.

Put it in the crock pot with a little celery salt, garlic powder and minced onion and about 1 -2 inches of water. Cook low for about 8 hours. Serve with noodles tossed in equal parts of butter and olive oil and minced garlic with basil and add fresh grated Romano cheese for a different side dish. MMMMMM

buy a reynolds oven bag..... put spices on the roast garlic,salt, pepper, etc. place potatoes, carrots, onions around roast and cook at 350 degrees for 3-31/2 hours. sweet guy to cook for your wife

CROCK POT....potatos cut in half, carrots, one whole onion, and any other veggies you think she'd like,half full of water, some salt and pepper....cook all day, and serve with a fairly reasonable(cost wise) white wine, rolls, a small garden salad... good luck
