There are lots of easy dumpling recipies out there, but this one is my favorite. It is also fun to get flavored soy sauce to add some flavor. Play around with it, add and subtract to make it your own- dumplings are not really an exact science!
1/2 pound pork , coarsely ground
1/2 pound lean ground beef
1 cup finely chopped scallions
3 tablespoons soy sauce
1 tablespoon Asian sesame oil
1 tablespoon peeled, grated gingerroot
1/2 pound Chinese Napa cabbage,* finely chopped
1 1-pound package round dumpling wrappers (gyoza), 3 inches in diameter (can be found at grocery store)
In a large bowl, combine the pork, scallions, soy sauce, sesame oil and gingerroot. Mix well so that the flavors will penetrate the meat. Then add the cabbage and mix until all the ingredients are thoroughly combined. The filling will not taste right if you try to combine all the ingredients at once. Place 1 dumpling wrapper on a plate or a board. Place 1 scant tablespoon of pork mixture in the center. Moisten the edges of the wrapper with a little water, then fold them over the filling to form a half-moon shape. Pinch the center together first, then stand the dumpling up on its base and pleat one of the sides of the half-moon twice, halfway between the outer edge and the center. Pleat the other side in the same way and leave the dumpling standing up. Stand the finished dumplings on a baking sheet lined with wax paper. Do not allow the sides of the dumplings to touch each other, or they will stick together. Repeat, using the remaining dumpling wrappers and pork filling. The dumplings can be made in advance and frozen for up to 3 months, or they may be cooked immediately, either boiled or pan-fried. Serve hot, with SoySauce on the side. *If you cannot get napa cabbage, substitute green cabbage. Because it is not as moist as the Chinese cabbage, add 2 tablespoons of water to the pork filling before incorporating the cabbage.

I know this is not what you're looking for, but something tasty in a dumpling try this one. Called Apple Dumplings:
4 Granny Smith Apples
2 cans crescent rolls
1 cup sugar
1/2 cup of brown sugar
1 1/2 sticks of butter
2 teaspoons cinnamon
1 12oz can of Mountain Dew
Heat oven to 350 degrees. Spray 9" X 13" baking with pam. Peel, core and quarter apples. Wrap apples with crescent rolls-total of 16. Arrange in a baking pan. Mix sugar, brown sugar, cinnamon and butter to coat the outsides of all 16 pieces. Pour 12 oz of Mountain Drew over all the dumplings. Bake for 35 to 40 minutes or until brown and beginning to crust on top.
Now get a bowl of ice cream and a dumpling and pray you can stop eating.
If the apples are regular sized use four, if you have the big softball sized apples you can use only three.

I hate having to use flour/dough to make dumpling so I just go to Wal-mart and buy the Kettle Dumplings and break them into three pieces. I use chicken broth, a can of cream of chicken soup,a can of potato soup, one stick of butter, 1 cup of milk with a pack or two of Kettle Dumplings(depending on how many you are feeding). I don't salt but I do add pepper. Let everything come to a boil before you break your Kettle Dumpling into mixture and add only a few at a time, this keeps them from sticking together. Reduce heat and monitor them-stirring them frequently to avoid sticking.... So good. You won't regret using the Kettle Dumplings.

INGREDIENTS
6 boneless chicken thighs
2 (10.75 ounce) cans condensed cream of celery soup
salt and pepper to taste
1 (12 ounce) package refrigerated biscuit dough
DIRECTIONS
In a large pot over high heat, combine the chicken with enough water to cover, and boil for 15 to 20 minutes. Drain some of the water from the pot, reserving 3 cups in the pot. Remove chicken and allow it to cool, then pull it apart into bite size pieces; return to pot.
Reduce heat to medium, and add the cans of condensed soup. Season with salt and pepper. Pull the biscuit dough into pieces, and add to the soup. Simmer over medium heat for 7 to 8 minutes, or until the dough is cooked through.

Chicken and dumplings. Celery, carrots, green beans, chicken bullion cubes (2) six cups of water, onions, garlic powder (I use a lot) or fresh garlic, chicken, of course, and I use the roll of biscuit dough for the dumplings. Oh, and chicken broth for optimum flavoring.

i like to use ground pork, ground chicken, finely diced shrimp, minced scallions, minced ginger, diced water chestnuts, minced bok choy, crushed garlic, sesame oil, soy sauce, rice wine vinegar, oyster sauce, and a little sugar.
