You don't even need to worry about spices with your peppers. For the best flavor roast the peppers over an open flame until skin is blackened, then put them into a bowl and cover with plastic wrap and let sit for about an hour. Peel the skin (it comes off easy) and gut the seeds then cut to whatever size you want. A little kosher salt and black pepper and you are done.
