Sorry... it's white rice. I fixed it for some stir fry and fixed tooooo much...I've read some really great recipes here...thanks to all.

Chop up an onion,bell pepper.Mince a little garlic.Saute these for a couple of minutes, in a little oil or butter.Add rice,saute a few minutes more.Scramble an egg,pour slowly around on rice and stir till egg is done.Salt and pepper......Good.
You can also add frozen or canned peas,and/or other veggies with a little soy sauce...yum.

Try this Rice Casserole it is really good and hearty!

INGREDIENTS
2 cups cooked rice
3/4 cup and 1 tablespoon and 1 teaspoon shredded Monterrey Jack cheese, divided
2/3 cup canned or frozen corn
1/3 cup milk
3 tablespoons and 1-3/4 teaspoons sour cream
1/3 cup chopped green onions
DIRECTIONS
Preheat the oven to 350 degrees F (175 degrees C).
In a medium bowl, mix together the rice, 1 cup of the cheese, corn, milk, sour cream and green onions. Transfer to a 1 quart casserole dish, and sprinkle the remaining cheese over the top.
Bake for 25 to 30 minutes in the preheated oven, or until cheese is melted and the dish is heated through.

The second is my favorite since you can make rice pudding, bread pudding, etc.

SALMON FRIED RICE

3 Tbsp. olive oil
2-3 cups leftover rice pilaf OR cold cooked rice
1 (7 oz.) pouch pink salmon
1 cup frozen baby peas
2 eggs, beaten
2 Tbsp. low sodium soy sauce

PREPARATION:
In heavy skillet or wok over medium high heat, heat olive oil. Carefully add the leftover Rice Pilaf or cold cooked rice and stir fry for a few minutes to heat. Add salmon and frozen peas; stir fry for 3-5 minutes until peas are hot. Push mixture to sides of skillet or wok and add beaten eggs. Scramble eggs until just set, then stir eggs into rice mixture. Sprinkle with soy sauce and stir fry for another minute or two, then serve. Serves 4

QUICK PUDDING

1 heaping tsp. flour
1 heaping tsp. cornstarch
3 tsp. sugar
1 c. milk
1/2 tsp. vanilla extract
Chocolate chips
Optional fillers, as desired: leftover rice, bread, etc.

Mix flour, cornstarch and sugar together; add 2 teaspoons of milk and mix until there is no dry powder left (otherwise the pudding will have lumps). Add the remaining milk and blend well. (If adding fruits, rice or bread, add at this point.) Heat up, stirring constantly.
In Microwave: 1 minute high, 1/2 minute at 50% power; 3 minutes at reheat.

In Pan: High until bubbles are seen; turn heat down, stirring constantly until it looks translucent.

Remove from heat, add vanilla extract and chocolate chips. Chill in refrigerator 1/2 hour.

Serves 1-2.

Hawaiian-Style Fried Rice

You can add or omit items depending on what you have at home. Must have is the oyster sauce and shoyu for seasoning.

Cook bacon and onion until they are cooked not crispy. Add garlic. Put the rice in. Make a hole in the middle and scramble eggs, cook and mix through. If you have, add frozen vegetable mix (beans, carrots, corn, etc.). You can add any other vegetables you wish.

Season with shoyu 1 tablespoon, oystersauce 1/2 tablespoon, pepper. Green onions if you like.

This is the way we use leftover rice and eat this for any meal breakfast, lunch, or dinner.

Depending on what type of rice there are many options. I'll give you some ideas for white rice... make chicken fried rice, serve teriyaki chicken on top of it or stir fry next to it, place herbed chicken breasts on top in a baking dish with salt, pepper, and some cream and bake, or add the rice to uncooked ground beef with some tomato sauce and italian seasonings and stuff into a bell pepper- top with more tomato sauce and bake until meat fully cooked. (350 approximately 35 minutes)

Take a bag of frozen chopped broccoli, cook it and add to rice then add shredded or chopped cheddar cheese. Stir thoroughly and add butter to personal taste. You may have to add a small amount of water while stirring depending on how long you let the rice sit. It may have become sticky.

You can fix stuffed peppers with one cup of the cooked rice and if you like you can fix rice pudding or pour milk and some sugar over the rice and eat like a bowl of cereal.

Recipe for Stuffed Peppers:

1-1 1/2 lb. hamburger meat, browned and drained
1 medium onion chopped
1 clove garlic, minced
salt and pepper to taste
1 tsp. chili powder
1 medium bell pepper
water
1 cup rice

Cut the top off the bell pepper and clean the inside out. Cook bell pepper in water until pepper turns a pale green in boiling water. Chop the rim of bell pepper, Chop onion. Brown hamburger meat with chopped bell pepper pieces, onion, garlic, salt, pepper, and chili powder. Drain grease. Add rice to hamburger meat mixture. Pour into greased casserole dish with the bell pepper in the middle filled with meat mixture. Add water until slightly visible at the bottom of casserole dish, about 1/2 cup. I use the water I cooked the bell pepper in for flavor. Cover with foil. Bake in 350 degree oven for about 45 minutes to an hour. Before the time is up, take the foil off and let it brown the top of meat mixture. You can top with cheese.

We always eat this meal with creamed style corn and a slice of buttered bread with a salad.

Depends what you want it for...

My mom will make rice pudding with left over rice.

I generally add various things and just fry it up.... Mix up some chicken/ham/ground beef and some veggies and some spices (oregano, salt, pepper, garlic power/salt and anything else you care to add in) throw in a little juice (pineapple/apple) or broth or even some italian dressing... fry it up till everything is hot and enjoy... I love to create things using left overs...

Aside from a fried rice recipe, you could add it to black beans and rice. Look for Tommy's Rice and Beans on epicurious.com. I love this recipe and it's great for using up rice.

Fried rice, all you'll need is some soy sauce, frozen vegetables, spices like garlic powder, salt and pepper, onions, some oil or butter and a meat like chicken, spam, shrimp or beef.
