Mayonnaise Cake
"Mayonnaise makes this cake nice and moist."
Original recipe yield: 2 -8 or 9 inch layers.
INGREDIENTS:
1 cup mayonnaise
1 cup white sugar
3/4 cup water
2 cups all-purpose flour
1 1/2 teaspoons baking soda
4 tablespoons unsweetened cocoa powder
1/2 teaspoon salt
2 teaspoons vanilla extract
DIRECTIONS:
Preheat oven to 350 degrees F (175 degrees C). Grease and flour two 8 or 9 inch round cake pans.
Sift all-purpose flour, salt, baking soda, and cocoa together.
Whip mayonnaise, white sugar, cold water, and vanilla together until mixed thoroughly. Add flour mixture slowly and beat at medium speed of an electric mixer for 2 minutes. Pour batter into prepared pans.
Bake at 350 degrees F (175 degrees C) for 20 to 25 minutes. Frost with your favorite frosting.

Some box mixes do have dairy in them. But don't make a box cake (at least not until she turns 10!) try this:
Vegan chocolate cake...
INGREDIENTS
1 1/2 cups all-purpose flour
1 cup white sugar
1/4 cup cocoa powder
1 teaspoon baking soda
1/2 teaspoon salt
1/3 cup vegetable oil
1 teaspoon vanilla extract
1 teaspoon distilled white vinegar
1 cup water
DIRECTIONS
Preheat oven to 350 degrees F (175 degrees C). Lightly grease one 9x5 inch loaf pan.
Sift together the flour, sugar, cocoa, baking soda and salt. Add the oil, vanilla, vinegar and water. Mix together until smooth.
Pour into prepared pan and bake at 350 degrees F (175 degrees C) for 45 minutes. Remove from oven and allow to cool.
Yields 8 servings

this is such an amazing carrot cake that is free of dairy and soy...I make it for my little 5 year old cousin who can't have dairy and she loves it.
1 cup flour
1 cup sugar
1/2 teaspoon baking powder
1 teaspoon cinnamon
salt, pinch
1/2 cup oil
2 eggs
2 cups grated carrots
Blend all ingredients and mix very well.
Pour into greased and floured 9 inch baking pan.
Bake for 25- 30 minutes at 350.

NANA EDIE'S DEVIL'S FOOD CAKE
This recipe, all the rage at the turn of the previous century, makes the quintessential layer cake—old-fashioned and toothsome.
For cake layers
1/2 cup applesauce
1 tablespoon distilled white vinegar
4 oz semisweet chocolate, chopped
1 stick unsalted butter, cut into pieces (you can use lard or margarine without soy)
1 cup water
2 cups all-purpose flour
1 teaspoon baking soda
1/2 teaspoon salt
2 cups sugar
2 large eggs
1 teaspoon vanilla
Make cake layers:
Preheat oven to 350°F. Butter 2 (8- by 2-inch) round cake pans and dust with flour, knocking out excess.
Stir together applesauce and vinegar and set aside. Melt chocolate and butter or margarine with water in a large metal bowl set over a saucepan of simmering water, whisking until smooth. Cool slightly. Sift together flour, baking soda, and salt. Beat sugar into chocolate mixture with an electric mixer. Add eggs, 1 at a time, beating well after each addition, then beat in vanilla. Add flour mixture and beat on low speed just until combined. Add applesauce mixture and beat on high speed 2 minutes.
Divide batter evenly between cake pans. Bake in middle of oven until tops of layers spring back when touched lightly and edges have just started to pull away from sides of pans, about 35 minutes. Cool layers in pans on racks 5 minutes. Run a thin knife around edges of pans, then invert layers onto racks to cool completely.

Date Loaf Cake
INGREDIENTS
1 cup dates, pitted and chopped
1 cup dark brown sugar
1/4 cup margarine
1 cup boiling water
1 3/4 cups self-rising flour
1 teaspoon baking soda
2 teaspoons vanilla extract
DIRECTIONS
Preheat oven to 400 degrees F (200 degrees C). Grease and flour a 9x5 inch loaf pan.
In a large bowl, combine dates, brown sugar, margarine and boiling water. Let stand 15 minutes. Stir in flour, soda and vanilla. Pour batter into prepared pan.
Bake in the preheated oven for 45 minutes. Allow to cool.

Do the box mixes have dairy in them? You just add oil, eggs and water. Not sure if they have powdered milk in the ingrediants.
