I think it sounds really tasty! Peppercorn sauce tends to be too acidic for me sometimes, and the sweetness of the potato will balance that out nicely.

Actually my two favorite ways to eat sweet potatoes are either deep-fried (like french fries), or grilled. I was never too crazy about the "casserole" style that mom makes for Thanksgiving (with the marshmallows on top).

Slice the sweet potatoes into fairly thick (like, 1 inch) rounds, leaving the skin on (wash them well first). Cook them partially by simmering them in lightly salted water for about 10 minutes...add a couple of fresh garlic cloves to the water, for even more flavor. You don't want to cook them completely, just 80 percent or so.

Dry them with paper towels, coat them with some kind of cooking oil, salt and pepper. Grill them as you would grill a steak--just a few minutes per side, turning once.

I think that would go great. Just make sure to put salt on your sweet potato to balance the sweet with salt. Wonderful together.

I've had that combo. a few times in the past few years. It tasted fine, to me -- actually a nice change from plain potatoes (fried or baked)
