Cherries and Cream Parfaits recipe
Ingredients
1/2 Cake, angel food, prepared 1/2 c Sugar -- brown
2/3 c Milk, skim -- heated to Chopped
Boil 1 ts Vanilla extract
Cut into 1-inch cubes (6 c) 1 Gelatine -- unflavored
8 oz Cottage cheese 1/2 ts Almond extract
8 3/4 oz Cherries -- drained and 1/3 c Milk, skim -- cold

Directions
Equally divide cake cubes and cherries int 6 (6 oz) dessert cups; set aside. In blender, sprinkle unflavored gelatine over cold milk; let stand 2 minutes. Add hot milk and process at low speed until gelatine is completely dissolved, about 2 minutes. Add cottage cheese, sugar and extracts; process at high speed until smooth, about 2 minutes. Pour over cake into cups; chill until set, about 30 minutes.
Cherry Pecan Spread
Prize-tested winner from BHG magazine in the spreads for muffins, toast and bagels category.
2 cups small curd fat-free cottage cheese
2 tablespoons low-fat sour cream
1 tablespoon packed brown sugar
1/2 cup chopped pecans, toasted
1/2 cup dried tart cherries, halved
1 teaspoon lemon zest
Place cottage cheese in a blender or food processor. Cover and blend or pulse until smooth.
Transfer cottage cheese to a medium bowl. Stir in sour cream, brown sugar, pecans, cherries and lemon zest.
Serve immediately or cover and refrigerate for up to 8 hours. (Spread can be kept chilled longer but cherries will begin to stain).
Serve as a spread for muffins, bagels, English muffins or toast.
* To toast the pecans - preheat oven to 350ºF. Spread nuts in a single layer on a baking sheet. Bake for 5-7 minutes or until lightly toasted.
Serving size = 1 tablespoon.
This lemon pie is made with lemon juice, gelatin, cottage cheeese, and cherry pie filling.
INGREDIENTS:
1 9-inch graham cracker or cookie crumb crust
1 envelope unflavored gelatin
1/2 cup milk
1 cup cottage cheese
1/4 cup sugar
6 tablespoons frozen lemonade concentrate, thawed (half of a small can)
1 cup whipping cream, whipped
1 can cherry pie filling
PREPARATION:
In a saucepan over low heat, sprinkle gelatin over milk. Heat, stirring constantly, until gelatin is dissolved; remove from heat. In a mixing bowl, beat cottage cheese until smooth; add to gelatin mixture along with sugar and lemonade concentrate.
Fold in whipped cream; spoon into crust. Chill thoroughly. Top pie with cherry pie filling.
Out of this World Salad
½ pkg. Lime Jell-O
¾ cup boiling water
½ lb. miniature marshmallows
1 small can crushed pineapple
1 cup pecans
1 carton cottage cheese
½ pint whipping cream
10 maraschino cherries
Pour boiling water over Jell-O and marshmallows until partly melted. Add pineapple, mix, put in refrigerator until partly jelled. Add nuts, cottage cheese, cherries, mixing well. Fold in whipping cream (beaten stiff).
Place in refrigerator until firm.
CHERRY ALMOND NOODLE PUDDING
Ingredients needed:
8 ounces medium, spiral egg noodles
2 tablespoons unsalted butter
1 cup dried cherries
1 1/2 cups sour cream
1 cup cottage cheese
3 eggs
1 cup sugar
1/2 teaspoon grated lemon zest
1/2 teaspoon vanilla extract
1/4 teaspoon almond extract
2 tablespoons melted butter
1/2 cup slivered almond
Cook noodles in a large stockpot with boiling, salted water until tender, about 5 minutes. Drain noodles in a colander and place in a large bowl with the butter. Toss to coat well.
Preheat the oven to 350 degrees F. Lightly grease a 9 by 13-inch baking dish.
Bring 1 cup of water to a boil, add cherries, cover and remove the pan from the heat. Allow cherries to stand for 5 minutes. Drain well and set aside.
Combine sour cream, cottage cheese, eggs, 3/4 cup sugar, the lemon zest, vanilla, and almond extract in blender or food processor. Process until smooth, stopping to scrape down the sides as needed.
Stir together the sour cream mixture, buttered noodles, and cherries. Place the noodle mixture into the prepared dish.
In a small bowl, combine the melted butter, almonds, and the remaining 1/4 cup sugar. Sprinkle nut mixture over the noodle pudding and bake for 25 to 30 minutes. Pudding should be cooked through and golden
Cherry Cheese Cake
Crust:
1/2c. butter margarine
1/1/2 –2 c. flour
egg
¼ c. sugar
Directions: Mix cookie dough for crust or use graham cracker crumb crust. Line bottom of 9” spring from pan with dough
Cherry Layer:
1 c. canned sour cherries
½ c. sugar
1 tspn. almond extract
1 tbspn corn starch
Directions: Blend juice from canned cherries with sugar, extract and corn starch. Cook over low heat til thick, stirring to prevent sticking. Add cherries. Cool. Spread carefully over dough in pan.
Cheese Layer:
1 c. sugar
1/1/4 lb. cottage cheese
4 tbspns corn starch
6 eggs, separated
1 pint sour cream
Directions: Run cottage cheese through strainer. Add 4 tbspn over starch. Stir until thoroughly blended. Stir in egg yolks, one at a time, beating after each addition. Add cream then sugar. Lastly, fold in stiffly beaten egg whites. Pour in pan over cherries. Bake one hr at 350F. Let cool in oven.
(Pineapple may be used instead of cherries, or cake may be made without fruit. Lemon, vanilla or almond flavoring may be used. Serve cold)

either make a cheese youghurt dessert with cherry topping or cheese cake. mix the cheeses together with a little whipped cream to stiffen/sweeten it up, make a simple biscuit base by crushing plain digestive biscuits add a little melted buter and leave in fridge to harden, then put the cheesey stuff on top of the biscuit, leave in fridge for approx two hours then top with the cherries!!!!
