My pregnancy craving is pineapple and cream cheese sandwiches (not pie, not balls, etc). I can't seem to find a recipe for plain ole pineapple and cream cheese sandwich spread anywhere online. Does anything else go in the mixture (sugar maybe)? And how much pineapple and cream cheese goes in?

Here is a recipe that sound really good, and should make enough to hold you for awhile!

Hawaiian Tea Sandwiches

2 C Crushed pineapple, drained
1 C Sugar
1 C Chopped nuts
8 oz pkg Cream cheese
Milk or mayonnaise


In saucepan combine pineapple and sugar. Bring to boil. Cook until thick, stirring constantly. Cool. Stir in nuts.
Soften and mash cheese with enough milk or mayonnaise to make a good spreading consistency. Combine with pineapple mixture.
Spread on thin bread, top as sandwich. Trim and cut into squares.
Makes about 4 cups.

Pineapple-Cream Cheese Tea Sandwiches
3/4 cup soft butter
1 teaspoon cinnamon or nutmeg
20 slices bread, of your choice
1 1/2 cups soft cream cheese
1/2 cup pineapples, finely chopped
1/2 cup finely chopped nuts (for this recipe, I prefer walnuts)

Combine the butter with cinnamon or nutmeg and spread the mixture over 1 side of each slice of bread.
In a small bowl, cream the cream cheese, if necessary, and stir in the pineapple and nuts.
Spread the cream cheese mixture evenly over 10 slices of bread and top with the other 10 slices.
Remove the crusts and cut.

Pineapple Cream Cheese Sandwiches

3 medium carrots
1/3 cup dried cranberries, raisins or mixed dried fruit bits
1/4 cup shelled sunflower seeds
6 6 or 7 inch Italian bread shells (Boboli) or Italian flat breads (focaccia)
2 8 ounce tubs cream cheese with pineapple

Peel carrots. With a vegetable peeler, carefully cut carrots into long, thin ribbons. Place ribbons in cold water to crisp. Set aside. In a small bowl combine dried cranberries, raisins or dried fruit bits with sunflower seeds. Slice bread shells or flat breads in half horizontally. For each sandwich, spread cream cheese with pineapple on both cut sides of bread. Sprinkle fruit seed mixture onto cream cheese. Drain carrots; pat dry. Add carrots to sandwich. Top with remaining half of bread. Slice sandwiches in half; wrap in plastic wrap. Chill in the refrigerator for 2 to 24 hours. Makes 12 servings.

Philly sells a premixed cream cheese with pineapple in it...or you could try cottage cheese with pineapple in it
