There are now supposed to be five different types of taste receptors in our tongues. They are:
Salt receptors, Bitter receptor family, Sweet & savoury receptors,. Sour receptors — sour is the taste of acid,
The perception that water is sweet right after eating amla (Indian gooseberry) may be a result of the interaction of the gallic acid contained in Amla with the some of the taste receptors in our tongues.
Other naturally occurring substances that can modify our sense of taste include gymnemic acid (a product of the Indian tree/shrub Gymnema sylvestre) that decreases the perception of sweetness by competitive inhibition of the sweet receptor. Miracle fruit (Synsepalum dulcificum) turns sour tastes sweet. The active ingredient, "miraculin", binds to a site near the sweet receptor. When sour substances then are tasted, a conformational change in the taste cell membrane occurs in such a way as to bring the miraculin molecule into contact with the sweet receptor, activating it. If one tastes a solution of lactisole at a concentration known to give strong sweetness inhibition, spits out the solution, and then rinses the mouth with water, the water tastes strikingly sweet. The mechanism of action in each of the above cases is different and also poorly understood!
