We are getting married by a justice of the peace in three weeks. Our officiating officer used to be my boss, and I would like to give him a gift from my fiance and me as a couple. Any suggestions on what would make a nice, appropriate gift?

The best gift comes from the heart. Since I don't know this person, and you do, it would be better for you to think about his personality and choose something he would like, but might never buy for himself. Consider his hobbies. For example, if he is a wine enthusiast, give a wonderful bottle of wine or a subscription to a wine lover's magazine. Just giving him a little thought will provide the answer.
Good Luck.
