Out of the thousands of different kinds of mushrooms, there are only a handfull that don't either poison you or make you see smurfs doing cartwheels. So how many people did it take to test each one and find the safe ones, and why didn't they give up on mushrooms all together once like ten or so people got sick from trying bad ones. These are the kinds of questions that keep me up at night.

Its funny, I am the same way. I want to know these answers. Like how did we figure out that tobacco made the best smooke weed? Did someone stuff normal grass into their pipe? What about thistle? Did they smoke that before they found out tobacco was the good stuff?

Because they didnt test them and die...they were smarter than that. If you are testing something new you do it gradually. First on the lips, then lick it, then a nibble...etc etc. What keeps me up at night is which bright spark had the idea first about milking a cow...scary.
