passata sieved tomato
2 whole cloves of garlic
2 whole leaves of basil
salt to taste

simmer for half an hour to 3/4 of an hour to infuse flavours...

remove garlic and basil and disguard...

this sauce is good for pasta and pizza... if you are a meat eater cook a pork chop in the sauce to make ragu

Just before Christmas I went to York to see Russell Brand and went to an Italian restaurant and had a duck with plum sauce pizza. I know it was a special for Christmas, but it was amazing. The plum sauce was spicy and sweet and the duck was perfect, no cheese, no tomatoes, just the sauce and duck. Very special.

I have a bread maker and I make pizzas completley from scratch. I use Passata, it's not so strong tasting as Tomato Puree.
