I believe that stress is certainly one factor - and stress tends to lead to habits such as scratching your head, which makes the dandruff more obvious.
However, the main cause is almost certainly diet. Dandruff is a fungal condition which is stimulated by sugar in the diet.
If you eat too many sugar-laden foods you will be more prone to dandruff. Sugar comes in many forms and beer and other alcoholic drinks, white flour products and refined foods will all contribute.
If you cut down the junk foods you will feel less stressed, too.

Dandruff can also be caused by: seborrheic dermatitis, fungal condition, pityriasis capitis, ringworm, eczema. Sometimes a dermatologist needs to be consulted if you can't control it on your own.
