Clavestone is partially correct and l1011graham is wrong. Here's the deal: the Nikon D40 only works with lenses that have built-in motors for the auto-focus. So the D40 works like a charm with the 18-55mm kit lens and with the inexpensive 50-200mm tele zoom. But apart from that, there's not much choice for extra lenses for under $600. This camera simply isn't intended for people who want to use a whole arsenal of glass - it´s intended for people who want to use just one or two basic lenses.
The D40 gets great reviews. Here are in-depth reviews from two of the most respected sites:
http://www.dpreview.com/reviews/nikond40/page25.asp
http://www.steves-digicams.com/2007_reviews/nikon_d40_pg8.html
Now... having said all of this in defence of the D40, I´d personally rather have the Nikon D50.
The D50 is priced similarly and it´s a bit older, but it's also a more advanced camera. For one thing, it WILL accept hundreds of different lenses. The D50 also has a slightly better auto-focus system.
What the D40 does better, is bridge the gap from a point and shoot camera - it has easyer controls.
But you can´t go wrong either way. Just pick the model that suits your intended use best.
As for the Pentax K100D, this is also an attractive option. I don´t agree with the Olympus E500 however - it has a slow start-up time and a tiny viewfinder. For me, those drawbacks would take a lot of fun out of photography.

I agree with OMG. The D40 is a good way to get started in SLR's, but I would prefer the D50. My wife has one and it is EASY to use with great results.
Having said that, though, see:

I wish I had bought the D40 instead of the D70s.The D40 has most of the features a semipro will need. And all your old NIkon lenses will fit it.

Nikon is not ready to support this camera. The only lenses that will autofocus with this camera are AF-S series (all in the $800+ range). Why come out with a sub $600 kit if no lenses will AF with it.
The Pentax K100D and Olympus Evolt 500 2 lens kit are just dominating the entry level cameras.
I'd rather go with the D50 (you should still be able to find them)
