Lamma Island
You can hike there and the seafood in Lamma Island is very famous. Also, there are many Hong Kong traditional food to buy.
Lantau Island
You can go there by taking the "NgongPing360", which is a new cable car in HK. In Ngong Ping, it's look like a old HK, so I really recommend you to go there. Beside this, you can also went there to see the Giant Buddha and Po Lin Monastery.

I too went to HK for 7 days last week. I went to the Victoria Peaks, the view simply is stunning, you pay for your ticket and then queue but as soon as the tram arrives, the people in the back of the queue push to the front. I wasn't aware of this and my 6th position turned to last before I knew why they were pushing so be wary of them. We did most of our shopping in the Ladies Market in Mong Kok, most of the goods, if not all, are fake so make sure you don't pay the asking price, we paid about 60% of the asking price. The other place to go is HK Harbour, there are the famous stars handprints on the floor and the scene at night is great. Have a wonderful trip and you will wish you could stay for much longer than a week.

For electronics (computer accessories) go to Golden
Plaza or Apliu St. Both places are located in Shamshuipo
kowloon. Take the MTR and get off at Shamshuipo Station. Visit Ladies Market for clothes and various
items from the Mongkok Station. Please note that these
places open for business at 11 am Other places of
interest are Causeway Bay and Sheko Market.

I just came back last week, and I kept some tourist brochures and maps, that I can scan and email if you wish. However, there are so many good sites on the internet where you can find information about HK (www.discoverhongkong.com). You can also pick up free brochures and map at the airport, just after you pick up your luggage and pass through the customs, just before the arrival door, you will find a tourist information centre. The agents are always very useful and ready to help, they speak perfect English and will direct you to your destination also.

Go to Victoria Peak. Thats about the only sightseeing place I know of. Beautiful view when I was there in the mid 1980's... Take a camera and go in the evening so you can see the lights.
