general rule:
NO fresh-water fish for sushi or sashimi. Only salt-water fish.
second rule:
ONLY the freshest fish!
Tuna and Yellow Tail are good old favorites.
Yellow Tail Belly is the sweetest and softest part of Yellow Tail. It's more expensive than the rest of the Yellow Tail as there's not as much of it, but I can feel it melt in my mouth as I write this!

Yellow fin tuna is the most popular. Sashimi quality is expensive, but worth the trouble to find and pay for. It's not as hard to find a fish market that buys it flash frozen as it used to be. Fresh caught is always best, but not always practical if you are in the midwest.

Butterfish, hard to find even where it's caught is considered to be the very best sashimi fish by people I know.

I used to live in Hawai'i. Yellow Fin Tuna is called Ahi.
One of the local favorites for sashimi.

Any tuna is good but they have to be the absolutely freshest fish you can buy. The freshness is graded as "sashimi grade". SO if yoou spot a pacific yellow fin tuna with a sashimi grade tag on it, by all means buy it.

Really fresh ocean trout, kingfish, salmon, tuna, squid sashimi grade fillets (ie with no blood veins or skin)

Ahi! Yes, my favorite for sashimi and nigiri.
Now, if you cubed it, threw in some limu, Maui onions, green onions, shoyu, and just a dash of red chili flake, you are set with some awesome poke.
