It sounds like your girlfriend is suffering from sleep insomnia. Insomnia is the failure to fall asleep and remain asleep. Sleep is light and easily disturbed. Some common symptoms include fatigue, irritability, and poor attention which you have probably noticed.
Some factors that provoke insomnia is your enviorment such as loud noises, uncomfortable bed, snoring partner, temp out of wack etc. 1) Make sure she is comfortable when she sleeps. Another thing is changing sleep habbits such as taking naps going to bed at various different times can affect insomnia. 2) Have her try and go to bed at same time every night and wake up at same time. 3) I assume she doesnt drink alcohol, smoke, drink caffiene close to bed time. This can effect insomnia as well. 4) Is she engaging in highly exercise activities close to bed time. 5) Is she taking any medications? This can definetily cause insomnia promblems.
6) Is she highly stressed from work, marriage or somehing else in her life? Try to eliminate stress.
7) Try these steps if it doesn't help, I suggest seeing your doctor for further assistant.

I dream a lot on weekends because I am allowed to have a normal sleep cycle without interuption from an alarm clock. I dream a lot around 9 o'clock.
I found that thinking about what I dreamt about before I even open my eyes help imbed them in my mind. Keeping a log of dreams helps also for some people.
Everyone dreams, but not everyone remember them.

Have a deep sleep...
When she's really tired, and nobody is around to make any noise, she may be able to dream again.
Your gf seems to have great awareness.
