I have a couple I made out of desperation when my children were young. My grandkids now thinks these are the best ever toppings.
.
#1 Marshmallow Daydream
1 cup marshmallow cream
3 Tbs. of white (clear Karo syrup)
1/2 cup peanut butter (smooth or with nuts)
1 or 2 sliced bananas, the half each slice to make a half moon.
1 small bar of solid milk chocolate, shaved
Stir together the first three ingredients, if too thick for spooning over Sundae, add a little more syrup.. Store covered in a cool place until time for party, then slice bananas as described, gently mix in the bananas. If you have time, just put the slices individually on top the topping for each sundae for an even better effect. Then sprinkle a little chocolate shaving on top.
This doesn't have to have the bananas or chocolate to be good.
#2 So Hot It's Cool Sundae Topping
1/2 jar hot fudge topping, Hershey's is best, heated
2 reg. individual bags of M& M's
2 cups marshmallow creme
3 Tbs. White Karo Syrup (Clear)
1 pkg. Red Jello (I like the cherry) (only use 1 or 2 Tbs of the dry powder.
Mix marshmallow creme and syrup,
Then gently swirl the dry jello into creme mixture. Do not mix thoroughly. It should look white with red swirls.
To assemble Sundae, put dollop of hot fudge on ice cream, then put the marshmallow creme on, then sprinkle with colorful M&M's. MMMMMMMMMMmmmmmmmmmmGood!

Oreos
Chocolate sauce from a container
drop of carmel
Melt the Chocolate Sauce and then add the carmel. Pour over I ce Cream. Crunch up the Oreos and place over top. That sit your done!
M&Ms and mintt work well too if yuo sub them for the last two ingredients

Fluffy Marshmallow Cream
6 tablespoons water
1 1/4 cups light corn syrup
3/4 cup plus 1 tablespoon sugar
4 large egg whites
Pinch salt
Pinch cream of tartar
2 tablespoons vanilla extract
In a small saucepan fitted with a candy thermometer, bring the water, corn syrup and 3/4 cup sugar to 246 degrees.
In the meantime, in a completely clean, dry mixing bowl, with and electric mixer, whisk the egg whites, salt and cream of tartar until creamy and foamy, about 2 minutes. Still whisking, sprinkle in the remaining 1 tablespoon of sugar and continue to whisk until the whites hold very soft peaks, about 2 minutes. While mixing on slow speed, carefully drizzle in the hot syrup. Turn the mixer to high and whisk until thick, fluffy and just warm, about 7 minutes. Turn the mixer to low and whisk in the vanilla.

Gooey Hot Fudge Sauce
2 C. (12 oz.) semisweet chocolate chips
2 T. butter
1/2 C. half-and-half
1 T. corn syrup
1/8 t. salt
1/2 t. vanilla extract
Melt chocolate and butter with half-and-half, corn syrup and salt in heavy 2-quart saucepan over low heat, stirring until smooth. Remove from heat; let stand 10 minutes. Stir in vanilla.
Pour into clean glass jars and seal tightly. Store up to 6 months in refrigerator. Reheat sauce in double-boiler over hot (not boiling) water before serving, if desired.
Makes about 1 1/2 cups sauce.
CARAMEL ICE CREAM TOPPING
1 1/2 c. brown sugar
1 tbsp. cornstarch
Combine first 2 ingredients together.
1 c. light cream
2 tbsp. butter
Add to above ingredients, cook and stir until boiling. Reduce heat, simmer 8 to 10 minutes. Stir occasionally, until mixture thickens. Makes 1 3/4 cups. Will store in refrigerator for 2 weeks.

1 C. Dark Brown Sugar
1/2 C. Light Karo Syrup
1/4 C. Soft Butter (no substitutions please)
1/2 C. Heavy Whipping Cream
Cook over low heat, stirring until well blended and warmed through.
This sauce is wonderful by itself or by adding some nice butter toasted pecans to it. Please enjoy!

Real Maple syrup is delicious on vanilla ice cream you could also sprinkle some nuts on top of it, like pecans .

you can cook sweetened condensed milk over the stove on low and it will carmelize and become a caramel-like topping for icecream. maybe add a splash of vanilla at the end.

How about , just the old fashioned strawberries .
You slice some strawberries , coat them in some sugar , cover and let them sit in the fridge for a day or two .
