the only really way i can think of is to ask her mom, or someone else trustable to keep a secret in her family, or one of her friends, and just tell them you want to know but you want it to be a surprise because you want to get her something.. if you do want to get her something. otherwise do you just want to know just to know or just to tell her happy birthday? because if that's the case when you are casually talking to her just ask her. but you said 'without letting her know,' so i'm assuming you probably are planning Something special.. so just ask like her mom.. mom's usually respect stuff and think those things are cute if you just let her know, i'm sure she'll get in on it.. and plus you'll get on her good side too :) which is always a good thing.

ask some of her friends! if she has one friend that she hangs out with most of the time, ask that person but be sure you tell the person you ask not to let her know! as a girl...i can tell you that if a guy asks a girl about a friend of theirs birthday..99% of the time, they will tell the person that you DONT WANT TO KNOW!

Have a newspaper and when she's around, ask her when her birthday is so you can read her horoscope to her. Otherwise, look in her wallet at her driver's license when she's in the ladies' room.

pretend that you're reading the horoscopes or something in a magazine and pretend you don't know either of you two's signs. All you say is "honey, what's your sign" more than likely she'll say what it is and you can at least get a small hint of what it its haha
