Its not a big bitter taste its just a little bit bitter. I want to get rid of the bitterness all together. this is my recipie:

1 can of frozen juice from concentrate
1 pack of active dry yeast
4 cups of sugar

Put ingredients into a steril milk jug, fill the rest of the jug with filtered water. Put a balloon on milk jug and put in closet for 6 weeks (or until the balloon deflates) then put in bottle for at least 6 months. Drink after 6 months.

yea I definately dont use bread yeast or citris fruit. And I dont use vineger either.

drink more of it. the taste won't matter after awhile.
seriously... filter thru at least 3 charcoal filters separately.

Don't use bread yeast, use wine yeast. This is IMPORTANT. I used to use bread yeast and it makes your wine taste like...bread! Don't use concentrated juice which has extra absorbic acid, Vitamin C and stuff that will make a bitter taste. Instead try 100% fresh juice from a bottle or better yet from a farmers' market type place. Most important thing is keep a journal so you don't make the same mistakes again, and keep trying. It took me 4-5 times to get it right, wine I could actually serve to people and have them still be kmy friends afterword.

You may be S.O.L on this batch. Balloons breath and let some air into the wine. Did you leave the balloon deflated for awhile before bottling? I recomend buying a bubbler (air trap) It will replace the balloon. It is a small cup or tube witch lets the wine breathe without absorbing and air. Try and try again.

i don't necessarily know how to get it out of a whole batch, but for a glass of wine, use a lemon or lime twist in the glass (a true twist is just the rhind part.) something in the rhinds seems to alter the flavor and make it less bitter/pungent

Try charcoal, processed kind. And then look at what the wineries do to avoid bitterness.

try a brita pitcher filter, if it worked for cheap vodka, it might work for u
