It's means to siphon off the liquid, leaving the sediment. Have some other containers handy to siphon into. Once you get close to the bottom you will want to stop before sucking up the sediment. Clean your carboy and return the liquid. Second fermentation maybe? I have made a ****-ton of cider and love this process for the simple reason of testing your product!

You want to rack your carboy to remove the sediment at the bottom. You don't want cloudy wine do you?
