So they won't puff up like little stale cakes! It's true. You ever noticed a pizza you ordered had little holes in the dough? They "dock" it with a spikey roller to prevent it from puffing up. Same thing.

Those holes are called docking. It is a technique pastry chefs use in making pie dough. It prevents the dough from rising so that the crackers will remain flat.

Cookie gave you the correct answer. They poke (or dock) them so that they don't blow open when they bake them. Have you ever had a pizza crust with a big, burned bubble on the edge...? Well, they didn't do a very good job of docking it.
