This is my mom's recipe for meatloaf:

1 Pound Hamburger
Ketchup
Mustard
3 Eggs
Salt & Pepper (a couple of dashes of each)
3/4 Cup Oatmeal

Preheat oven to 350 degrees. Mix all ingrdience in bowl. Once mixed together, place in a bowl that you are going to use for your meatloaf and place in oven for 1 hour or when the meat is brown in the center.

INGREDIENTS
1 1/2 pounds ground beef
1 egg
1 onion, chopped
1 cup milk
1 cup dried bread crumbs
salt and pepper to taste
2 tablespoons brown sugar
2 tablespoons prepared mustard
1/3 cup ketchup
DIRECTIONS
Preheat oven to 350 degrees F (175 degrees C).
In a large bowl, combine the beef, egg, onion, milk and bread OR cracker crumbs. Season with salt and pepper to taste and place in a lightly greased 5x9 inch loaf pan, OR form into a loaf and place in a lightly greased 9x13 inch baking dish.
In a separate small bowl, combine the brown sugar, mustard and ketchup. Mix well and pour over the meatloaf.
Bake at 350 degrees F (175 degrees C) for 1 hour.

Quick and Oh so Very Good Meatloaf:

1¼ hours 5 min prep
6 servings

1 lb extra lean ground beef
2 cups seasoned stuffing mix
1 egg (beaten)
1 1/2 cups water (approximate-used to soften stuffing)
1/2 cup barbecue sauce (can sub or also use ketchup)

1. Preheat oven to 375.
2. Put stuffing in bowl and moisten with water adding or subtracting water as necessary to have stuffing mix moist, mush it around a bit because the stuffing will absorb all the water.
3. Add meat and beaten egg and mush everything together.
4. Add 1/4 cup of the BBQ sauce and continue mushing untill everything is combined.
5. Put mixture into a loaf pan and shape, pour remaining BBQ sauce ontop, or you can do a mixture or BBQ sauce and ketchup.
6. Bake for 1 hour.

1 1/2 lbs of Ground Sirloin
2 Eggs
1/2 Cup of Masterpiece Barbecue Sauce
1/3 Cup of Milk
1/3 Cup of Seasoned Breadcrumbs or more
1/2 Cup of Chopped Onions
1/3 Cup of Chopped Fresh Parsley
1 tsp of Gravy Master
1/2 cup of red wine
2 pats of butter
1 small can of mushrooms or 4 or 5 sliced fresh mushroomns

Mix all ingredients together up to parsley and mix well. If too moist add a little more breadcrumbs. Mix well again and form into a loaf and place into a greased baking dish. On top of meatloaf, add dabs of butter. Then add gravy master to red wine and pour over top of meatloaf. Then add mushrooms around meatloaf and bake at 325 degrees for about an hour. If it is getting dry on bottom of baking dish add some water so you have some gravy to pour over meatloaf. Serve with mashed potatoes and a veggie and salad.

QUICK AND EASY MEATLOAF

1 lb. ground beef
1/4 c. chopped onions
1 slice white bread
1 egg, beaten
Ketchup
Salt and pepper

Preheat oven to 325 degrees. Combine ground beef and chopped onions. Soak bread in beaten egg. Combine with beef and onion. Shape into loaf. Top with ketchup, salt, and pepper. Bake at 350 degrees for 1 hour.

Get a good grade of ground beef and a package of dry meatloaf seasoning. Follow recipe on package and cook in microwave about 20 min. Brown under broiler for a few min.

2 pounds ground meat...beef, veal, lamb, pork, poultry or mixed
1 medium onion, 1 carrot, & 1 stalk celery diced in food processor
4 Tbs butter
1/4 tsp chile flakes (optional)
1 tsp thyme 1 tsp salt 1 tsp pepper
1 1/2 cups bread crumbs
1 cup cream or milk 1 egg
4 Tbs tomato paste or Ketchup

Saute onions, carrots, & celery in butter until soft. Add chili, thyme, salt & pepper and stir. Meanwhile, soak bread crumbs in cream or milk.
Have 9x13 pan ready for meatloaf. Using hands mix meat with sauted veggies, soaked bread, & egg. Form into loaf & set into your pan. Ice with ketchup or tomato paste. Add about 1 cup water to pan. Bake at 350 for about 1/2 hour.

This recipe is quite yummy. I do change it a little. Instead of using crushed crackers, I use bread crumbs or oatmeal. Also, I add a little garlic. Otherwise, I do everything as directed, and my family loves it...even the kids, which is always a plus!

McCormick has a really good powdered mix. It's with your gravy mixes in the store.
