not recipes.....just the best way to flip them so they brown more even and all cook the same...best pans...??

Use a heavy fry pan (Cast Iron is good). Use white potatoes. Scrub and peel. Cut however you like. Heat oil in skillett. Wash & DRY potatoes. Drop into hot grease. The big secret: Do not over crowd pan. Cook one layer at a time. Turn when they start to look brown.

1) Lots of butter - not the healthiest but the best way and flavor!
2) Don't put too many into the pan. If making for many people, fry in small batches for optimal browning and flavor!
3) Best pan is a heavy cast iron skillet that has been well seasoned. If you don't have that, the next best is a heavy pan (Paderno, Lagostina).

If you are cooking sliced potatoes, then it is best to keep the layer thin or the ones in the middle will just steam. And I know that my family all want to have them crusty and brown, so if I make a lot, I use a larger pan or two pans.

WELL, i just fry my potatos in oil just enough to cover the bottom of the frying pan and cook on med high and turn them when you see there getting brown. BELIVE ME THIS IS NOT A RECIPE OK HAHA
