Stuffed Chicken Breast with Feta, Spinach, and Tomatoes

6 boneless, skinless chicken breasts
8 oz feta cheese (drained)
3 c chopped fresh spinach leaves
1/3 c oil packed sun dried tomatoes, drained and chopped
½ c oil cured olives, pit in*
1 t minced lemon zest
1 t dried basil, oregano or mint
½ t garlic powder
1 15 oz can diced tomatoes, including juice
Ground black pepper

*If using pitted olives, add to slow cooker in the final hour of cooking.

1. Place 1 chicken breast between plastic wrap and using the back of a skillet or tenderizer mallet, pound breast until about ¼ inch thick. Repeat with each breast
.
2. Combine feta, spinach, sun-dried tomatoes, zest, basil, garlic powder and pepper in a medium bowl.

3. Lay chicken breasts smooth side down on work surface. Place approximately 2 tablespoons of feta mixture onto the wide end of the breast. Roll tightly. Repeat with each breast.

4. Place rolled breasts seam side down in Crock-Pot slow cooker. Top with canned tomatoes and olives.

5. Cook on Low for 5 1/2 to 6 hours or on High for 4 hours. Serve with rice or polenta if desired.

I use my crock pot for just about everything. Yesterday I made ribs....they turned out yummy. Try a meatloaf. Make like you are going to put in the oven. Put in your crock pot on low all day, and at dinner time it will be ready.

Here is my most favorite crock pot recipe. I made it up in college. I hope you enjoy it!

I envision eating this in a rustic-type bowl while sitting in front of the fireplace in a log cabin on a cold winters day! This is very easy to make and most of the ingredients you will most likely have on hand. I'm just not sure if you would consider this a chowder though. I use a 5-qt crockpot when making this.
Makes: 6 - 8 servings Prep Time: 30 minutes Cook Time: 6-7 hours Ready In: 7.5 hours Servings:

INGREDIENTS:
2 cups ham; diced into bite size pieces
4 potatoes; diced into bite size pieces
4 cups total frozen vegies; (green beans, peas, carrots, snow peas, etc.)
1 large onion; cut how you like
garlic; how ever much you like
1 can cream of mushroom soup
4 TBSP milk
1 cup sour cream
1 cup water
basil, oregano, salt, pepper, etc.
1 28oz. can diced tomatoes with juice

DIRECTIONS:
Mix mushroom soup, milk, sour cream, water, and spices in LARGE bowl. (I only have a 5-qt crockpot so I had to mix it in my huge roasting pan! If you have a larger size, you should be able to mix it in the pot.) Then mix in ham, potatoes, vegies, onion, and garlic. Put into crockpot. Pour can of tomatoes with juice on top of other ingredients. Cook on low heat for about 6 - 7 hours.

Crock Pot Chili Chicken

INGREDIENTS:

6 boneless chicken breast halves, cut in 1-inch pieces
1 cup chopped onion
1 cup chopped bell pepper
2 garlic cloves
2 tbsp. vegetable oil
2 cans Mexican stewed tomatoes (approx. 15 ounces each)
1 can chili beans
2/3 cup picante sauce
1 teaspoon. chili powder
1 teaspoon. cumin
1/2 teaspoon. salt

PREPARATION:

Saute chicken, onion, pepper, garlic in vegetable oil until vegetables are wilted. Transfer to slow cooker; add remaining ingredients. Cover and cook on LOW for 4 to 6 hours. Serve with rice.
Serves 4 to 6.

mine is my own receipe....take baby backs and cut them up and put them in the crock pot...let them cook for about 4+ hours and watch and make sure the meat removes from the bone about 1/2 inch. Drain them and apply your favorite bbq sauce and let them stay in the fridge over night.

Take them out grill them or oven broil.

Here's a dessert to make in your crock-pot!

A package of almond bark
A bag of semisweet chocolate chips
A jar of unsalted peanuts.

Dump everything in, but stay close by. Stir it as it starts to melt, and be careful not to burn the chocolate. Once it all melts, it burns quickly. When it is completely metled, drop it by spoonfuls onto wax paper, and let it cool. It's really good!

This is my simplest and favorite. Picnic roast or pork shoulder,water, and an onion sliced. Cook on low 8 hours orhigh 4. Take meat out and pull apart. Discard water. Add your favorite BBQ sauce and heat . Serve on buns with coleslaw. Yumm...It just sounds like summer ,doesn't it?

I use mine several times a week. Buy a bag of meatballs and couple jars of spagetti sauce. Then all you have to do is cook up the noodles. I also throw in chicken or pork and add just about any kind of sauce...everything from BBQ to teriaki to honey mustard. Then I serve it with potatos or rice. The freezer section also has crockpot bagged meals. You just dump them into your crockpot and add water. They also sell bags to put in your crockpot so you won't have to wash it!! I LOVE THESE bags!! Its because of the bags that I use my crockpot so much.

cream of pumpkin soup, beef or lamb casserole, goulash - just use the crock pot the same way you would use an oven except for longer cooking time.

1) take a whole chicken, potatoes & carrots spices and water put in crock pot in morning on low and eat for dinner that evening.

2) take stew meat, potatoes,carrots, corn, green beans, celery, onions, spices, beef bullion cubes, water, put in crock pot in morning on low eat that evening for dinner.

3) white beans soaked overnight, then put in water in crock pot with ham, bacon, carrots, salt. cook on high for an hour or two then switch to low for remainder of day, serve with corn bread.

4) take a pack of chicken wings or chicken drummies or even meatballs, 1 large jar of your favorite bbq sauce & 1 small jar of either grape jelly or orange marmalde whichever you prefer (I like it with grape jelly) put in crockpot on low for about 4-6 hours
