When you're frosting any cake, make sure the frosting is thin enough to spread easily...if it's too thick, add a little corn syrup. You won't have to do that with store-bought frosting, it comes the right consistency already.

Wait until your cake is cool. Pile the frosting on top of the cake, and spread it with a spatula. Push the spatula forward, making sure there's always frosting between it and the surface of the cake. Don't move the spatula back and forth, or crumbs will start to come up.

Frosting

1/2 cup butter
1/4 cup cocoa
1/4 cup plus 2 tablespoons milk
1 box (1 pound) confectioners' sugar, sifted (4 1/4 cups sifted)
1/2 teaspoon vanilla

combine butter, cocoa, and milk in a saucepan; bring to a boil. Add remaining ingredients and mix well with electric mixer. Spread over the hot sheet cake then sprinkle with chopped pecans.

Besides having the frosting at a pliable consistency, I have a glass of water nearby. Periodically dip your spreading knife in the water. This helps it glide across the frosting and keeping it from "tugging" at your cake and tearing it.

never heard of a cookie sheet cake...it's probably tearing up on you when you want to frost it, as you probably havn't allowed it to cool down enough. GOODLUCK*
