First - champagne is very expensive and rarely used for everyone to toast with if there are more than 20 guests. "Real" champagne is from France and a $40. (cheapest) bottle only serves 6 glasses!! The american bubbly is quite nice, tho. and can be purchased for about $20 a bottle. The truth is that the toast is whatever you choose to serve and white wine of any kind or even sparkly punch is very acceptable. Nowadays many people don't drink alcohol and I've been to many weddings where they have poured glasses of the expensive stuff, guests used their water glass, and the bubbly went stale and wasted!! The toast to the bride is a symbolic traditional thing and you should feel comfortable with whatever you choose to do. If you have mega-bucks to spend and you do choose to use champagne, just ask the maitre d- to be sure you have a wineglass of ginger ale if you respond with a toast to the groomsmen, which is customary, or to your parents as many brides do. If you only have the toast to the bride, well, then, you are sitting there with a smile on your face and don't drink anything as you do not toast yourself!

Sparkling wine if my favorite alcoholic beverage. I always advise against a champagne toast; it is a complete waste of wine and money. Most feel the same way you do. Get a few bottles of a good sparkling wine and keep it at the bar with the other wines and beverages. People can ask for it if they want it. Let your guests toast you with what ever they are drinking at the time. Also you don't drink at your own toast so don't worry about the beverage.

Absolutely not. Some couples choose to toast with sparkling wine or juice (we did) or have a spontaneous toast (where guests toast with whatever they may be drinking at the time. If you will be providing alcohol during your reception, I would recommend a spontaneous toast so everyone is comfortable. There will always be some people who choose to toast with champagne and others who don't like the taste or don't drink alcohol. By having a spontaneous toast, everyone can be happy with toasting with whatever's in their glass.

Sparkling Cider is close to the looks of Sparkling Wine/Champagne. Offer both incase another person wants the non-alcohol route to toast too.

I think if you would like to offer champagne and sparkling juice, that would be great! Not everyone likes or can drink (alcoholic, diabetic) so the sparkling juice would be an option for guests who choose not to drink alcohol.
I had an open bar at my wedding, and everyone just got whatever they wanted to drink, and this option is fine too. But if you want everyone to have some bubbly, you should have that served at the tables.
Also, if kids are invitied, they can drink the sparkling juice and be part of the celebration!

It doesn't have to be champagne, you could do awesome cocktails as a totally different idea, leave the champagne out altogether. I used to hate it as well, but have now acquired a taste for it, you could accustom your taste buds to champagne by drinking it on the run up to the wedding, but it might not work so I would go with cocktails!!

Offer champagne to guests who want to drink it and provide an open juice bar for those who wish to not drink. You have to be accomodating to everyone so that nobody is unhappy.
