When do you use el&la instead of un&una and vice versa?

el, la = the
un, una = a, an

un libro = a book
el libro = the book

una flor = a flower
la flor = the flower

They are used exactly the same way than in English (except for the differentiation of gender).

El and LA are articles in Spanish for the. El is masculine and singular. La is feminine and singular.Un and Una are article for a.an. Un is masculine for a/an and Una is feminine for a/an. Libros is books and is masculine so you use el libros to say the book and to say a book you say Un libro. lapiz (sorry cant put accent mark over the a) is feminine and to say the pencil you say La lapiz. To say a pencil you say una lapiz since it is feminine and singular. There are also articles for some in spanish for both masculine singular/plural or feminine singular/plural i forgot them though. 'el' is the definite article for masculine nouns. don't get this mixed up with 'él', which means 'he'.

-el perro = the dog. perro is masculine, so you use el.
if you're talking about plural nouns, then you use los.
-los perros = the dogs.

'la' is the definite article for feminine nouns.

-la iglesia = the church. iglesia is feminine, you use 'la'
if you're talking about plural nouns, then you use 'las'.
-las iglesias = the churches

NOTE:
Whether a word is feminine or masculine is something you have to remember when learning Spanish. most feminine nouns end with '-a', but there are exceptions, like el agua.

Un is the indefinite article for masculine nouns, and una is the definite article for feminine nouns.

ie. un perro = a dog. perro is masculine, so you use un.
ie. una iglesia = a church. iglesia is feminine, you use una.

EL and LA are definite articles like The. When used before a noun, like El hombre, it means, the man, therefore, it refers to the certain particular man. but when UN is use before a noun, like un hombre, it is similar to saying a man, therefore, it could be any man...

well, el and un are masculine while la and una are feminine..
